Parisian Escape; 3/10/2017-3/12/2017: Hugely reductive nose that also shows sharp honey and pronounced lemon rind. Palate is initially a touch clipped and leaves something to be desired. Lemon meringue. Some saffron botrytis in here too. Oily. Really expanded and improves over three hours. Gains a fresh white mushroom quality. Even if its off-vintage, older bottles of this are still very special and delicious. The '91 Rougeots yesterday was bigger, younger, and more complete, but this was a beautiful mature white Burgundy.

Brought to a dinner at Bay Wolf; chilled down first. Significant amount of tartrates. The cork slipped into the bottle and we then decanted the wine. Medium gold though not dark at all; initially rather closed on the nose. This developed nicely to a nutty character over a couple of hours and also developed weight and smoothness on the palate; kept improving and is ready to drink but not in danger of falling off a cliff. Remarkable given what is reputed to be a mediocre vintage but a great producer and vineyard.

I really had not had a lot of experience with 91 whites but this was a complete revelation. Took much longer than the 90 to open up. Light, pale, straw color almost like a young savignon blanc! Nose had a bit more smoke and musk in the beginning but this really blossomed into a very nice wine. Great length and depth with great acidity and minerality to balance. Bottles like these will continue to hold. Scoring could be a bit conservative as the gulf in class may be more evident if we served the pair with other wines!
