What a fabulous wine this is! This sold for 90€ and while not cheap at all, worth every penny!
It’s the impeccable balance and purity of fruit which makes Cavallotto such class!
The fruit is a little more muted than last time but the tannins unlike my prior prediction have not resolved more… be patient. I will open my next bottle in 2028 at earliest! I sense there is more to come here.

It’s been 3+ years since I enjoyed a bottle, and the wine continues to improve. The fruit is a little less vibrant, but the wine is exquisitely balanced, with notes of dark berries and spice, and with resolved tannins and good acidity. This is very enjoyable now.

Pronounced nose of licorice, red cherry, iron, licorice, black olive, topic, orange peel. On day one, extremely tight so VacuVin and saved till day two.
Completely different tasting experience on day two - so much better. High acid, full body, pronounced fruit intensity. Very high tannin but beautifully ripe and velvety. Long finish with layers of tobacco leaf. Outstanding on day two. Difficult to decide when to drink these - most likely will try the next one in 3-5 years but there is value in drinking them now for a youthful San Giuseppe experience. Certainly, I will keep 1 or 2 for the long term.

90 minute decant. Nose of ripe plum, roses, cherry, bacon fat, mace, and wet leaves. Layers of drier red fruits on the plate with leather, beef carpaccio, and some black fig notes. Finish hits hard with oak, then the tannins build and build, lingering and adding salty black olive and a strong finale of leather. Impressive now and there's no rush to drink it given the stuffing.

Liked the nose and length. Cherries and berries make a really attractive nose but in taste it is just a bit harsh and dry in taste. Next day the same. Really hope the tannins settle down with another 3-5 years or so.
