Restaurant Zoldering Amsterdam-celebrating their Michelin star: gentle grassy and spicy, dry, very concentrated, lovely bitters, persistent in the aftertaste, but showing a bit the alcohol.

On the nose sweet citrus, lemon and lime, and white flowers. Also an unbelievably clean minerality, it reminds me of a pristine, glass-clear stream with rocks at the bottom. Some herbaceousness or grassiness there too. All confirmed on the palette precisely. Then a long creamy mouth filling finish. Some old oak perhaps. Beautiful satin mouthfeel. Extraordinary complexity. Became even more intense on second glass. Beautiful stuff.

#sancerrestudy (My place, Chicago IL): This shows off a riper and vibrant side with peaches, candied lemons, key limes, green apples, pears, white flowers, jasmine, crushed rocks, and mineral notes. The Medium bodied feel is well balanced with the vibrancy of the nose showing beautifully on the palate along with racy, high acidity as well as a lengthy finish. This won't likely ever be a classic Sancerre, but it could certainly benefit from a few ears to fully balance out.

Pale yellow wheat color. A bit of green herb, grapefruit pith, and stone. Lighter weight than usual for Cotat, quite crisp and pungent. Very good.
