The nose is consistent, but with a hint of green apple.The wine simply plods on the palate, and the weight of the fruit betrays the underlying green citrus flavor. Better with fish, but a disappointment. Maybe if I'd had oysters.... This wine has a lot of backbone, seems to have lots of life left at this time. Not really pleasant on its own, however really came alive when paired with seafood course. Very enjoyable with food.

On the palate it's elegant with more herbal, cheesy and floral tastes alongside the zippy citrus flavours. A few complexities added by the oak too. Good minerality. Must confess I paired this with shallow fried breadcrumbed chicken and it was a little overawed but then when on its own it began to show better. | Domaine Bernard Defaix Producer websiteDomaine Bernard Defaix Chablis 1er Cru Côte de LéchetThe 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.
The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe. Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.
An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis. We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.
When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

2014 Vintage Notes: "... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman
