Community Tasting History

Community Tasting Notes (average 90.2 pts. and median of 90 pts. in 16 notes) - hiding notes with no text

Tasted by Ingmars on 1/16/2022: I'm surprised at the youthful light yellow colour. From a cold cellar temperature, it takes some time to reveal its ripe, though not crisp, apple nose, with grilled cashew nuts following - which in turn morphs into something close to peanut and lemon pith. At three hours, what seems to be some very subtle oak shows up, though there is no mention of any ageing in oak. Very good concentration of ripe, pungent lemon and apple flavours have a bit of grip mid-palate. Fullish bodied. Though I can't taste barrique, the wine is round enough for me to think there has been some exposure to oak. A little rasp-like at the tail, which is what takes it down a half notch to very good plus. There should be another five years in this. (285 views)
Tasted by elfez on 10/6/2020 & rated 92 points: Still lots of life left in this - plenty racy but also soft and yielding. Delighted; wish this weren’t my last bottle. (410 views)
Tasted by jafny on 3/12/2016 & rated 90 points: In top form, nice mineral quality, well rounded not too crisp. Actually paired well with my spaghetti with lobster sauce. Not sure if it can improve much more. (1349 views)
Tasted by nectar14 on 1/2/2016: Very nice, medium weight with good clarity and focus of flavors. Could easily be drunk now, but this was better on the 2nd day. (1328 views)
Tasted by nectar14 on 1/20/2015 & rated 91 points: Pale straw gold. Scents of tangy pear and lemon, quartz and wet stones. Medium bodied, fine clarity and focus of flavors, finishing persistently and with class. Not powerful, but makes a balanced statement. (1878 views)
Tasted by Charlie Pendejo on 12/18/2014: A bit more fruit - pear & lemon - and richness than my note from 9 months ago, which slightly deemphasizes the flint and grapefruit pith. Arguably friendlier now than then, and still highly enjoyable and food-friendly, though I found it a tad less thrilling. (1726 views)
 Tasted by dkstar1 on 11/4/2014 & rated 88 points: Agree with Bob H's assessment 100% (1740 views)
Tasted by wayfarer on 9/7/2014 & rated 90 points: Served with pan fried sea scallops in butter/olive oil, with dill/lemon on fettuccine, greens. Opened 30 mins ahead of dinner. Lovely smooth immediate fresh light citrus, mineral & acid, bit of fruit & grass. Opened up with more floral hints, rose even and subtle pear tones. Very fresh throughout. Medium body, medium long finish. Complemented the fresh sea scallops very nicely. Enjoyable! (1218 views)
Tasted by Bob H on 7/19/2014: Light yellow-gold in the glass; nice Chablis brininess on the nose.

Lean and dry on the palate, with saline accents and adequate acidity. Not bad at all, especially for the price. (1332 views)
Tasted by ashegedyn on 7/5/2014: Mineral, saline, oyster shell, and citrus nose. Light to medium intensity. Complex, perfumed, and elegant. On taste good balance although slightly acidic which adds to its citrus character. Good length. Very nice Chablis! (943 views)
Tasted by Charlie Pendejo on 2/28/2014 & rated 91 points: Just like I want my Chablis - it's far more about flinty minerals & fossils than fruit (which I'd say is mostly grapefruit including a little pith); it's got some body but *plenty* of acidic cut so that it's trim and energetic, not rich and flabby at all. Fantastic value! (1090 views)
Tasted by Charlie Pendejo on 2/26/2014 flawed bottle: Corked (940 views)
Tasted by thubten on 1/19/2014 & rated 90 points: Crisp Grape fruit aroma. Strong cherry acid which is not surprising at 13% alc. Yellow color. The acid dominates. New world wines are rarely this acid. It is a very clean taste with not off tastes so the fruit comes through clearly. (1149 views)
Tasted by MyCellar01 on 1/14/2014 & rated 92 points: 2011 vintage is as good as the '10.
Biodynamic organic wine.
Very nice, fruity nose. Fresh palate, fruit forward, very enjoyable.
Very complimentary for foodies, especially our seafood experience at Fish House. (928 views)
Tasted by CamWheeler on 8/28/2013 & rated 86 points: Bibendum Portfolio Tasting: Lemon and slate nose. Dilute on the palate, falling off further on the back palate. Okay. (2256 views)

Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet

The 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.

The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe.
Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.

An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis.
We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.

When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.

Burgundy

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

# 2013 Vintage Notes:
* "2013 is a vintage that 20 years ago would have been a disaster." - Will Lyons
* "low yields and highly variable reds, much better whites." - Bill Nanson
* "Virtually all wines were chaptalised, with a bit of sugar added before fermentation to increase the final alcohol level." - Jancis Robinson

# 2014 Vintage Notes:
"We have not had such splendid harvest weather for many years. This will ensure high quality (fragrant, classy and succulent are words already being used) across the board, up and down the hierarchy and well as consistently from south to north geographically apart from those vineyards ravaged by the hail at the end of June." - Clive Coates

# 2015 Vintage Notes:
"Low yields and warm weather allowed for ample ripeness, small berries and an early harvest. Quality is looking extremely fine, with some people whispering comparisons with the outstanding 2005 vintage. Acid levels in individual wines may be crucial." - Jancis Robinson

# 2017 Vintage Notes:
"Chablis suffered greatly from frost in 2017, resulting in very reduced volumes. As ever, the irony seems to be that what remains is very good quality, as it is in the Côte d’Or. Cooler nights across the region have resulted in higher-than-usual acidity, with good conditions throughout the harvest season allowing for ripe, healthy fruit." - Jancis Robinson

# 2018 Vintage Notes:
"The most successful region for red Burgundy in 2018 was the Côte de Beaune. The weather was ideal in this area, with just enough sunlight and rain to produce perfectly balanced wines naturally." - Vinfolio

Chablis

Chablis (Fédération de Défense de l'Appellation Chablis) | Chablis (Burgundy Wines)

2014 Vintage Notes:
"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

2018 Vintage Notes:
"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
