Introduction

A dinner at home with good food, good wines and as always good friends.
Wines were opened 2 hours in advance, and served in either Zaalto Champagne glasses for the whites and Zaalto Universal for the reds. Commandaria was served in standard tulip glasses.

Flight 1 - San danielle, truffle salami & Figs (1 Note)

  • 1990 Bollinger Champagne La Grande Année 93 Points

    France, Champagne

    Rich honey colour. On the nose it has a ripe, rich fruit note and this followes nicely on the palate. Lovely density and evolution. Lacks a bit of vitality (like a dom or a Krug 90) and we would suggest one drinks this sooner than later. Very Very good delicate wine. One for the lovers of mature champagne. 93-94 from us.

Flight 2 - Spiced Lamb with light yoghurt and pomegranate dressing on light pitta, aka Indian Tacos (1 Note)

  • 1991 R. López de Heredia Rioja Blanco Gran Reserva Viña Tondonia 93 Points

    As we say this is a wine that one needs to like the style. So unique, slightly oxitative ( by design), mineral and full of lingering rich fruit. F|irm on the palate, holds its own even against spicy food (hence our choice here). Pure and elegant and in a world of its own, the question is do you like that world? We absolutely do and for the price (~50£) these are wonderful wines. 93 easy drink now but this can last for another 20.

Flight 3 - The earth (1 Note)

Quails egg on a smoky parsnip mash and black truffle
Foie gras with smoked eel on a bed of sushi rice
Foie gras on thin polenta with black truffle caviar

  • 1985 Château Gruaud Larose 95 Points

    France, Bordeaux, Médoc, St. Julien

    This is a wine that we have documented ( and Loved) many times. Good cork, solid and just below neck in level. Another beautiful experince. Our earliest TNs hold. Once again an easy 95. Once thing we would add is that this wine now feels at its peak so not a bad time to enjoy it. 95

Flight 4 - Variations of Comte & Vin Jaune (1 Note)

  • 1976 Jean Bourdy Château-Chalon

    France, Jura, Château-Chalon

    Requires its comte as much as it needs patience to age. Dark in colour, rich yellow. Oxitative but not not harsh or sharp, well aged and mature with rich notes. Interesting but one needs to like the style and definitely accompany it with some well aged comte cheese.

Flight 5 - 12 Hour slow roasted pork shoulder with root vegetables and pak choi (2 Notes)

  • 1998 Serafin Père et Fils Charmes-Chambertin 94 Points

    France, Burgundy, Côte de Nuits, Charmes-Chambertin Grand Cru

    Serafin rules supreme once again. Dark red in colour. Full on ripe fruit, light cherry nose, spicy, entering secondary terrein, very pinot and open from the start. We chose not to decant but just left it to breath in bottle for 1 hour or so. On the palate it has the characteristic Gevrey/Serafin ripeness, good extraction, density of fruit, light smoky feel and simply very very good. Very enjoyable and the fact that it lacks the heavyness of the 99 makes its beautiful at the moment. 94-95

  • 1990 Castellare di Castellina I Sodi di S. Niccolò Toscana IGT 93 Points

    A good bottle! The wine evolves quite interestingly. On open it had a rich, sweet core akin to a supertuscan however an hour in a decanter later this evolved into a well secondary Bordeaux-esque wine. Earthy, mushroomy, cedar. On the palate it is well round, silky very enjoyable but lacks a bit of vitality and length. Dont get us wrong this is a very nice wine and well worth tha ~65 price tag. Drink now

Flight 6 - The Cheese board (1 Note)

  • 2004 Glaetzer Shiraz Amon-Ra Barossa Valley 93 Points

    Full on rich and powerful wine. The beauty of it is that its modernity and man influenced wine making is not here to mask poor quality fruit as it is the case in many "modern wines". Rich ripe fruit, spicy, exuberant nose. On the palate it is full on, round yet vibrant and rich. Unfortunately we were not as excited as Ms Perrotti-Brown and grating this a 99 as we founding lacking in elegance but still a sold and very good wine. 93

Flight 7 - Aux Merveilleux de Fred, merengue and chocholate cake. (1 Note)

    A sharper, less rich version of this traditional wine ( in theory the oldest continuously made wine in the world). Not sure what is different in the winemaking here but this is closer to a table wine rather than the rich pudding wine that it is meant to be. Beautiful bottle at least..
