Lemon/light gold. White pith, juicy citrus, lime, soft waxy, hint kero. Lacy! Sweet, pineapple, lime marmalade. Fruit skin and pineapple jam finish. Awkward phase. Pink guava finish!?

[Gohyakumangoku rice, 65% polish, 17%, yeast strain #901; bottled Jan 2019] Deep gold, almond essence, nutty. Complex, sweet, tannin structure. Mushroom, straw, complex, sweetness with time. gentle acetone solvents and overripe banana. Beautifully complex, and hugely enjoyable!

translucent ruby in glass. leafy dark berries, mulch, moss, sweet earth. Soft blue and straw berries, even mulberry. Juicy and sweet, lifted, confection notes. Great acid balance and concentration. Most inviting and elegant. Finishes minty and umami, with hint ash. A lovely drink, and very good with Ayam Serai!

Watering: ink, chocolate factory, toasted crackers, japanese soy. Soft fruit and dry spices on the finish. Long and complex. Remarkable!
