12/12/2010 - austinwinesalon wrote: NRThe Other Great French Blancs: Champagne and Sauternes (Wink Restaurant, Austin, Texas): Finally, some pinot noir. This probably needs more time, which one could tell from its flat finish and apparent lean-ness when compared with other flight wines. It started fresh, with lots of carbonation and a sweet, musty nose. The acidity was good, with lots of citrus flavors and yeast, lilac, light fruit, straw, green apple, lemon, some pear, pomegranate, raspberry, peanuts, and dried pasta notes. Had a short, wet stone/flint finish. I drank this wine a few weeks later and it was quite good, but here it seemed lean and was likely too young. Interesting that the "recolte" is emphasized in the title of this wine, so we don't have to find and read the miniscule RM at the bottom of the label. |

12/20/2011 - french16 wrote: NRWhile this was enjoyable, it was a little simple. Super high acidity, light yeastiness, this Champagne becomes more rounder and showing a little more fruit on the 2nd day and more poised. A touch of minerality. Maybe a little too young, no idea of the disgorgement date. 70% pinot, 30% chard. |

4/14/2012 - troutmonster wrote: NRPaired with a big plate of west coast oysters. Initially tight nosed, showing a chalky, salty, citrus driven aromatic profile. Slow to open up, but the palate showed slightly riper, driven by its PN fruit profile. High acid and long finished but a hair lean and unyielding right now though it did improve with air. Give it time? |

A certain saltiness, perhaps a nuttiness. Not great, not worth bothering with. [Cork + cage; 12% abv; Raeburn Fine Wines, Edinburgh, £25]. |
