Organic blend of malbec & muscat de Hambourg. Upon opening, the muscat is really dominant on the nose but as it opens, it's the malbec that takes the driver's seat. The muscat is quite noticeable on the palate but compliments the malbec so nicely that I really can't fault it. (I should mention that I am not usually a fan of muscat but in this particular blend, it is really interesting and well-done). This is definitely a vin de soif by definition and would be absolutely awesome for any apéro.

Unlike any other Cahors I’ve ever had, and as there is no mention of Cahors on the front label, this might actually be a Vin de France. It started out quite nasty, but a double decant took care of most of the stink. It was soft, with red fruits and very reminiscent of Beaujalais. Not bad for $20, but not worth the $40 it was discounted from.

Organic blend of chardonnay, sauvignon, colombard, marsanne, roussanne & gros manseng. The marsanne & roussanne macerated for 1 month in concrete vats, which contributes quite some substance to the wine but yet the overall result still remains incredibly fresh and so very gluggable. (For the record, it should be noted that there is a lot more on both the nose and palate than I was able to jot down; today was admittedly not my day for taking thorough tasting notes!)

Organic & biodynamic blend of petit & gros manseng. If there ever was a wine that smelled & tasted like apple tarte tatin, this is it! It actually made me think of calvados too but without all of the overpowering alcohol. It is slightly cloudy and ever so gently sparkling with a smidgen of residual sugar. Beyond that, the 13% ABV goes practically unnoticed making this dangerously gulpable! Freaking delish!

According to the producer, this is a blend of gros manseng, ugni blanc & muscat d'Alexandrie. Three months of maceration in stainless steel tanks. Six months of ageing in a combination of stainless steel tanks, oak barrels and foudres. I saw no indication of a vintage on my bottle but I was told that this is a 2021...
To date Fabien's wines have yet to disappoint me. Even his so-called "vins de soif" like this one are fascinating and incredibly enjoyable to taste. This is perfect for an apéro on a super hot day (like today!) but it could absolutely hold its own paired with food.

This rocks. Light fruity chillable crushable red for the summer. Clear ruby in the glass, with candied plum, strawberry syrup, and sour cherries on the nose. The palate is a fruit forward party, with mostly red fruit like strawberry, but backed up by stonefruit including nectarine. Super fun wine.

Fairly hefty colour, almost opaque. Intriguing nose of red fruit and green herbs, quite complex. Soft attack, medium to light bodied, shortish finish. Taste dominated by red currants, a healthy dose of acidity. Light tannins. And a soft mouthfeel due to no or very little sulphur. Clearly a product of the "vin nature" philosophy. QPR questionnable.

The nose gives off an odd (yet pleasant) salty/funky/fruity aroma that is a bit reminiscent of citrus Gatorade (or at least what I remember Gatorade smelling like!) As for the palate, this is an awesome (not to mention extremely well-balanced) vin de soif that one might very well be inclined to glug all day long.

Throttles the nose on first pour with dried lilac, barnyard, cedar, woodsmoke, and dried red cherry. Palate holding acid yet, juicy, balsamic crunchy red and Morello cherry. Orange peel, hint of fennel, but incredibly floral violet shows through all. Distinct lack of follow-through with finish, abrupt, talcy.

Wild wine - like a French mistress, pretty but unpredictable

After some time nose lost its primal unhingedness and settled into pretty gracile violets, dark cherries and nutmeg. Palate stayed consistent.

Very much "vin nature", i.e. no sulfites added. Simple, fermented grape juice. At least it is clean and not funky. Not a lot of substance, a few tannins that are still a bit rough. Not quite sure what to make of this or its ageing potential.

Rather volatile and pruney on the nose, but so elegant and finessed on the palate...

Aromas of wilted flowers, berry syrups and vinegars, prunes, a little honey and a lot of delicate leafy and herbal notes. Full, tangy and ripe, intense core of dark fruit, fine tannins and deep fiery acids, dense and complex mid-palate features beautiful herbal tones. Long and tangy, a little bit of a syrupy side to the persistent tart fruit character. I would want to follow this closely if i thought it might age. It certainly has stuffing, but it feels fragile too.

A few days later, and this is as volatile and pruney as ever on the nose, but it has transformed remarkably on the palate. It is now velvety smooth and the finish features a delectable combo of lifted spices and herbs (acacia wood?), muted dark ripe fruit and a mineral water character. This is gorgeous and so interesting. Based on this performance, I should think it will age long and well, but I think it will be necessary to keep it cool and stable.

Stanktown, this is gassy and savory, kinda like a stinky cheese or foot... lol, but that fades with air and there are many redeeming floral, spicy and fresh fruit tones: sweet roses, peonies, black tea, peppery spices, clove, cardamom, blackberry, cherry... tangy and juicy through the finish, enveloping and pleasantly chewy, seedy fruits and delicate herbal and floral tones mingle with nice savory leesy notes. Definitely has a low intervention minimalist vibe, this is marked by the amphora (weird combo of reductive and oxidative stuff? a little stinky at first, I don't actually know how to describe what i expect from an amphora wine, but it's often the thing that this wine is doing...) and it feels a little fragile. With enough air, it performs very nicely today. I wouldn't push it long outside of a cool cellar. Drink it while it's juicy and young.

fabulous stuff

aromas of ripe pear, pineapple, pomelo, beeswax, jasmine...

juicy and fresh, very lively and crisp overall, the fruit and floral notes linger beautifully, pithy and chalky nuances grip lightly
