While this doesn't seem to have gained the complexity you hope from a maturing wine its drinking well right now showing the way a Champagne should mature rather than tire. |

The initial aromas on this was kinda weird, with a celery and white pepper, a little stinky. With air this becomes a lemony an spicy wine, with a lot of citrus peel that creates length. My challenge I had was the spicy aspect to the wine, an oily-ilke citrus. I would have loved to retaste this again today, and I just wonder if I have captured the wine properly. |

I surprised myself by tasting this Blanc de Noirs Brut Nature, and was shocked by how much I enjoyed it. Rich and ripe berries make dosage seem irrelevant, and the textures are bright and minerally. Very well balanced, very good. |

The color here reminds me of Vilmart Emotion, the reflection of a salmon with just a touch of pink to lighten it. Opened yesterday. At that time, the wine seemed to be more lithe, elegant with red fruits. Saved plenty for today, to allow for a good study of the wine across both cool and room temps. When this is still energized with a cool temp, there is a tangy strawberry that carries the palate, along with a cleansing, mineral-laden finish. Letting this breathe and add some warmer temp, it becomes a bit more fleshy but not by a lot. Blood orange, grapefruit, a pure, tangy raspberry (Chambord comes to mind) and then a tart red apple shows up. The wine remains cleansing, persisting with its mineral profile. I believe some will attach the phrase 'drink with food', as I see that reference around Cellartracker with wines like this one. I can see how that could fit here, but the distinction to be made about this iteration of Rose Zero is for me more about 'bright, transparent flavor with a clean profile', and it's very good. |
