Caramel, toffee, slight nuttiness, hints of chocolate on the mid-palate, and then a smooth finish with a great but not overwhelming coffee not. Perfect viscosity for the flavor profile, which is to say that if it were any thicker it might be syrupy. |

This was big but not overbearing, with a nice level of tannins. As the "velvet" descriptor should suggest, it had a smooth, luscious mouthfeel. It was only decanted for about 30 minutes, but as it sat in the glass for an hour, this wine really started to take shape and integrate. The plums stayed at the forefront, but the smokiness, and later, some candied cherry, started to show through as secondary and tertiary flavors. This was unique and exquisite. |

My scribbled notes say, "Bacon dipped in black pepper with a side of dark fruits." That sums things up nicely, I think. The pepper was a hair overwhelming, but I was told that it recedes with more time in the decanter. In any event, this has great potential. Bravo. |

While it was tight and clearly young, it was still very expressive. Unfortunately, this is my first taste of this champagne, so I can't say that it was more open some time ago. But if this is closed, then whoa nellie. Anyway, this big guy showed me great citrus, a flash of yeast, and some deep nuttiness. What was amazing, though, was how well that whole package was integrated. I may have to pick more of these guys up -- and I'll definitely be a buyer on the magnum release. |

But he did! I didn't record any formal notes, but this was showing quite nicely. It was a smooth, straightforward rose. Very nicely balanced. Even the fiancee drank a bunch, and she's not a huge champagne fan. |

It was good and well worth the $24/375ml price. Suprisingly little nose compared to the strong flavors dominated by apples, with some citrus and a strong acidic backbone. Not for your wedding night, but if you're drinking this every day, you're happy. |

I detected some astringence at the very end of the finish that turned me off a bit, and which did not fall away with air. Nothing major though, and not enough to ruin this great experience. Perfect for a nightly sip or after dinner. |
