Elegant, harmonious, incredibly well integrated and developing beautifully. This is a remarkably enjoyable champagne at present. I imagine it will continue to age gracefully, but now is a fantastic time to drink if you don't prefer champagne's long aging qualities.

Realised on looking this up to write this note that I didn't learn the lesson from my first bottle, and drank this quickly out of flutes rather than with air from larger glasses. Oops. Still a lovely Champagne, although less impactful than it perhaps would have been, with rich but balanced fruit, some honeycomb, both smooth and energetic in feel.

Birthdays and Bolognese (My place, Portland OR): Nose: From the get go, this is so balanced and aromatic with red apples, spiced pears, meyer lemons, warm dough, pastry tones, biscuits, brioche, quince, yellow flowers, mineral notes, and some custard. There is excellent depth and the tones have melded together beautifully into a seamless quality.
Taste: The feel is Medium bodied with crisp, high acidity. There is excellent depth, texture, and balance showing off the class that this possesses. The tones of red apples, spiced pears, quince, meyer lemons, custard, brioche, warm dough, and yellow flowers.
Overall: This is just in a beautiful place as it is moving into the more mature phase while still showing off a lot of freshness. Everything is right in balance at this time and it is in a perfect window for drinking.

This bottle was a tale of two halves. The first couple of glasses, drunk from flutes and with a freshly-opened bottle, were no more than pleasant; I was slightly disappointed. I then gave it a go in a white wine glass, and there was an immediate improvement in perceived concentration, followed by a delicious blossoming with air for the remainder of the bottle. What had been crisp and tasty but essentially mute became perfumed, floral, buttery and extremely long, with a hint of umami. Occasionally the wine gave the impression of being too rich, but every time the acidity came in and whipped things back into line, like accelerating a RWD car out of a corner. A really accomplished Champagne that, in the end, felt like it was at the start of a delicious drinking window.

Lovely. In balance wit some bread and and pear citrus with a long finish. Drinking very well right now, but seems to have years left. Is great with food, and great alone. Lovely.

Oh this was so, so good. Vibrant acids, pear and the slightest hint of citrus. Lovely on its own, but paired so well with Maggi goreng (South Indian style).

Quite high acid, stony, baked apple, pear, fresh chamomile, toast, creamy, long deep spicy finish, the heat lasting quite a while. Fine and balanced, if a little oxidative at its core today. Second day much cleaner. 92

18 month since my last bottle, and pretty consistent with that prior experience. Progressing along a steady aging curve, this is early in its secondary maturity phase. Moderately rich, consistent with the house style. Good, not great.

This was amongst the few '10s (or '11s) I bought. I wish I had gone deeper on this one. My only bottle, and it was fantastic. Vilmart seems immune to difficult vintages. They didn't just overcome the challenges, they triumphed. Beautifully balanced Vilmart creaminess and acidity; more pear and white pit fruit than citrus. Nice minerality as usual. I'm disappointed I didn't buy more of these, but happy other vintages of GCdOr and CdC account for a large portion of my champagne inventory.

Opened for a Zoom conference with Laurent Champs of Vilmart, this was a joy to drink. The depth is the most obvious element - it has great richness and a long, weighty finish. It's not heavy, it just keeps pressure on your palate, while dancing around, not allowing you to catch it. Apples, yellow plum, a touch of brioche, and a finishing minerality from the fresh acids, make a complex and compelling drink. It was a fabulous match with our blue cheese gougeres, and we lingered over the rest of the bottle for several hours, savoring every drop.

Drank for lunch with Robin. Peaches and orange zest aromas. Poached pear. Feel substantial, while still maintaining a mouth-watering appeal. Delicate lavender candy finish. Lavender sugar/flavor crystals. Showing some brioche to the finish too. Complex. Give this time, check back in 2021 at earliest. Big acid. Lots of potential.

Vilmart lyckas igen. Vilken fantastisk trio 2008-2009-2010 är. Behövde lite luft för att öppna sig men sedan kände man igen Vilmarts underbara stil. När det här släpps kommer jag att köpa och lägga undan ett par lådor i källaren.
