Mid straw colour. Pronounced apple, very slightly waxy, against a background of citrus and hay. Became fuller and a little more floral with air. Probably still to see its best days in 3-5 years but good to open now nevertheless. ****

Big powerful nose with nose of honey and boiled lemons. Real intensity of flavour with layers and layers on the palate. Almost a little savoury on the entry with flavours of floral honey and straw. With time there’s almost a vanilla ice cream character. Very, very long.

Lovely light gold, hint of green. First night, very rich and voluptuous. Maybe a bit warm. Ripe fruits, hints of pineapple even, custard. Long. Next night much tighter and finer. Ripe melon and apple. Real mineral core. Tremendous depth and concentration. Long. Great acidity. Very good.

Drack det här ett par dagar tillbaka, och jag kan bara säga att det var rikt, smakrikt, fullmatat med gul frukt, stor kropp och ändå behöll fräschören hela vägen. Jag har en flaska kvar, och det är ingen brådska med den. Passar bra till smakrika fiskrätter, eller till ljust kött. Andra flaskan, 5 dec., 2017 Lite slankare och lättare nu, men också mer komplex och elegant. Gott till ugnsgrillad kyckling med vitlök och citron.

A fantastic white from South Africa. Ripe apricot, smoke, honey, sweet minerality and some tropical scents. Full-bodied, dense with explosive fruit, perfect balance and great length. Drinking perfectly already with a long life ahead. A wine that combines power with elegance and a unique character.

The Twelveth Annual Stonefields Dinner (Guelph, ON): What I found interesting on this wine was that despite it only being 8% or so semillion I felt it really was a notable element adding an almost petrol , oily, machine shop note to the wine. The Chenin add the typical honey, floral, citrus and melon. Very acidic and somewhat linear palate but finish is fairly lengthy.

The Twelfth Annual Stonefields Dinner (Guelph, ON, Canada): Only had a very small pour of this…..but very similar to the bottle that we had a few days earlier. Very open and lifted nose mixing pure lemon fruit with nutty elements. The palate balanced pure lemon fruit with minerals and almond notes. Finish was long and balanced.

Lunch at the Gilead Cafe (Gilead Cafe, Toronto, ON, Canada): 92% Chenin Blanc, 8 % Semillion - 18 barrels made and naturally fermented The nose is very open and inviting with aromas of lemon, quince, caramel, hazelnut and marzipan. The palate is balanced and integrated showing notes of lemon, honey, hazelnut and marzipan augmented with great minerality. This wine has obviously seen some time in oak but it does not stick out at all and gives an aded weight that is quite pretty. The finish is long….very pretty wine.

NOSE: DAY 1: underbrush; light oak; fennel seed; tropical; coconut. DAY 3: still quite tropical, as on day 1; coconut; hint of butternut squash or sweet potato.
BODY: tan-yellow color of moderate depth; medium bodied.
TASTE: DAY 1: coconut; tropical; awesome acidity; maybe a touch of r.s.. DAY 3: acidity has receded a bit, but is still quite nice; still fruity with maybe a hint of r.s.; pleasant mineral note; hint of powder; vanilla-flavored pipe tobacco; toasted bread on the finish; hint of oxidation creeping in; alcohol is not noticeable (14%); very good.
