Impromptu Dinner w/Friends (Pa Lian Burmese, Wheaton): Our penultimate bottle (seems like I have been typing that quite often as of late) of a blend of 30% pinot noir and 70% chardonnay based on the 2010 vintage, disgorged in December 2013 at 6g/L. Pink/copper color with a fleeting mousse and notes of red apple, honeycomb and red berries. Fine bead with abundant red berry fruit dominating the palate. Subtle doughy and nutty elements in the finish. I may be underrating this a bit. This disgorgement is in a good place right now and though it will hold, I don’t know that it improves much from here so consume near term, now to 2026.

From a bottle purchased in 2017, so at least 6 years of post disgorgement age. The wine pours pours pale salmon with hints of copper. Still very nice and present effervescence, though clearly less than you'd expect in a current release. The nose is just lovely showing ripe red strawberry, a kis of toffee, chalk, roses, cotton candy, and cherry blossom. A highly engaging aromatic display. The palate is enters on the mouthfilling red fruit with focused and zippy lemon high acid. The dosage is certainly a tad elevated from what's typically in fashion today, I'd peg it around 7 g/l. The finish is long and harmonious showing red cherry with touches of toffee. All in all I'm very pleased with how aging has been rewarded here. When tasted on release I found this simple, lacking complexity and overall expression. Now with some age the interest rises considerably. In this wine I'm seeing the early stages of the maillard reaction producing just a little toffee and caramel on the nose and palate. Just lovely stuff!

Friday night in the library. Generously delivered to us by Asparagus after a fair bit of air already. Appearance is clear, pale intensity, salmon pink colour. Legs. Fine persistent bubbles. Nose is clean, medium+ intensity, with aromas of strawberries, floral rose, brioche. Developing. On the palate, dry, high acidity, medium- alcohol (12.5%), medium body, Medium+ almost pronounced flavour intensity, with flavours of strawberries, ripe red cherries, raspberies, blood orange, citrus lemon, brioche, chalky limestone minerality. Long finish. Very good quality. Intense fruits with lots of energy and drive. Dosage 7g/l. Based on 2008 and 2009 vintages. 70% Chardonnay, 30% Pinot Noir. Disgorged September 2012.

N: When first opened we were greeted with an overwhelming aroma of yeast. Once in the glass notes of biscuit, floral, mineral, berries. P: Notes of minerality, berries, melon, fleeting sweetness. F: Dry, mineral, berry.
We thought this wine tasted better when first opened. After letting it sit for a while in the glass - we didn't jive with the aromas or taste.
But overall we enjoyed this wine.

It's been awhile since I tasted it-- and it remains consistent. On one hand, the small, long and stable bubbles. Color slightly darker pink/rose compared to previous tastes. Medium plus finish. Opened up and extended over the course of the tasting ... light fruits and blossom smell, on the dry side. I would say that the time gave it additional value. Upgraded the palate once it was matched with lightly grilled seafood. Literally upgraded it to brand new wine.
Remains my reference point to rosé champagne. Pure pleasure in a glass (~95, but I won't add a grade as I gave it 94+ and 95 before on CT)

Listed as being from the 2010 and 2011 harvests and disgorged 05.2015, this deep salmon-colored sparkler is a blend of 70% Chardonnay and 30% Pinot Noir. With a brisk tiny bead, it serves up intense aromas and flavors of apricots, peaches, dark plums and almonds. Light-to-medium-bodied, vibrant and lively on the mid-palate, it goes on to close with impressive length. This outstanding rosé is well worth its sticker. Bottles with the same disgorgement date should be at their best over the next 2-3 years. Drink now-2019.

Blind Dinner at The Bristol (Chicago, IL): Disgorged March 2015, 3.5g/L dosage, with juice that is from the 2010 and 11 vintages. Moderate yeast, with a distinct bready character on the nose. Tart cranberry and a nice richness to it, even though it does veer a touch to the hot and blowsy side. A touch of black plum on the palate, too. Shows quite round.

Very consistent with my previous notes, but I guess I should have given it slightly more decanting time, hence only 94+ and not 95.
(Edited: I went through my CT notes and realized it was bottle #10 of Pierre Paillard Rosé opened by us. It is a very good sign to the our preferences and view of the quality)

Outstanding, especially considering the price. The nose has strawberry, hints of melon and orange peel, lots of baking bread and yeast. The palate has substantial weight and power, but still manages to feel light and elegant. Pleasure to drink.

K&L Spring Champagne Tasting (K&L Hollywood): Pale salmon in color. Maybe my favorite wine at the tasting. Great minerality that suggests a really crisp rose, but a nice mix of richness to lighten things up a bit. Very elegant, with nothing overpowering. Soft on the palate, very crisp acidity, a hint of grapefruit pith on the very refreshing finish.

The color is a clear salmon one. The nose is clean, medium intensity, floral with red cherries, strawberries, roundness with light vanilla scented biscuit, youthful to developing. The wine is dry (6g/l), medium body and intensity, medium alcohol (12,50%), medium acidity, fruity and balanced, mainly red fruit, red cherry, strawberry, well integrated CO2 contributes to texture, round and biscuity due to yeast, med+ finish. Very good quality, premium price, drinking now.
I can't help the feeling that there was something missing here.

Nose: The nose is higher toned with red berries, citrus tones, crushed rocks, minerals, strawberries, and white fruits with a touch of yeasty notes.
Taste: Medium/full bodied with medium/high acidity. The structure is certainly there, but it's more on the refreshing side with red berries, strawberries, citrus tones, and crushed rocks.
Overall: This is a lovely rose. It's very well balanced with a nice freshness to it. I also love that this is 70/30 Chard/Pinot and that shows through very well too.

Nose: Fresh, balanced, and precise with white florals, minerals, pears, apples, strawberries, yeast, and some biscuits. The nose shows a lot of class and poise with a good amount of depth.
Taste: Medium/full bodied with high acidity. The structure is extremely noticeable, but it doesn't come off as too imposing. Beneath the structure lies a classy feel with white florals, minerals, strawberries, citrus, and some yeasty notes.
Overall: This was disgorged on 12/13. This bottle could use a couple of years to fully round into form. Still, it is quite good right now while having the room to improve.

I was considering for a while to increase the grade on this one to 95 (see previous note on this one), so I decided to put it up for a challenge in a French place. The verdict was clear, and all thumbs up. All participants plus the sommelier have voted thumbs up: Small, long and stable bubbles, crystal clear pink/rose color. Long, long long finish... light fruits and blossom smell, on the dry side, but not as dry as the 2002 Pierre Paillard, for example. Foods: Super good match to the fish dishes selected for dinner, and superurb match with Tarte Flambée the participants shared for appetizer. The vote of the people was: Bring more of that one.
So, to conclude: This Pierre Paillard Brut Rosé gives the best return for taste, and for value (cost) I've had in a very long time. It has a positive grade prospect (94-96) and I would say that if it keeps developing the way it is, it should make people happy for many years to come (assuming we won't finish all our bottles :D)

Tasted it twice this month (first time on June 2nd). My impression is just getting better. The color-Reddish/pinkish. Lots of bubbles, very unified and long. Bubbles remain even after having the glass stand for a while stable and unified. Taste of apple, a touch of hazelnut. On the dryer side makes it a perfect match with light dessert, fruit or even japanese dish, though I would take it more with the first two. I think this one is built as a winner, very stable, and I updated the previous score (93) to 94-96. I vote with my wallet, and bought a case of six.

Pretty pink in color, this lovely Champagne featured dominate notes of strawberry and yeast. The acidity was present but not austere, and overall, this had depth and balance. Very enjoyable.

Colgin Dinner with Ann Colgin (Les Amis, Shaw House): This was very good. It had a beautiful nose, with rose petals and cherry fruit scents wed to more savoury aromas of earth, white meat and slightly browning appley notes. Very nice - there was a lovely umami-driven depth and complexity to that nose, a bit of surprise for an NV. The palate, on the other hand, was still very fresh and zippy. There was perhaps a bit less depth and development than suggested on the nose - but this was all about elegance, balance and clean focus, with really nice, precise flavours of cherry and fresh green apples moving into a citrus, lemony finish rounded off by a very fine, almost lacy mousse. Medium-bodied, but yet there was no lack of complexity or interest with the wine. A really nice, lively start to the dinner - I could drink bucket-loads of this.

Nose: Nice brioche notes, a touch of bread but lovely strawberries and cranberries filling up my nose. Floral notes were detected too. Very lovely champagne.
Taste: Barley notes but the sweet strawberries and tart cranberries really come into focus here. Nice persistent bubbles and a pleasure to drink. Rather precise and clean. Delish!

70 chard 30 pinot. All estate all bouzy. Fantastic. Classic cherry, framboise, chard comes though with structure. Great length and balance. 8 generations 11 hectares all in bouzy. Giddy up.

Great minerality that suggests a really crisp rose, but a nice mix of richness to lighten things up a bit. Very elegant, with nothing overpowering. Grower Champagne Tasting, Individual Expressions of Champagne (IMW) (Trinity House, London): 70% Chardonnay and 30% Pinot Noir, 5-6% red wine added, a blend of 2009-2010 vinages, Bouzy, Montagne de Reims, vinified in steel tanks, no oak maturation, 3 years botte ageing.
The color is a clear salmon one.
The nose is clean, medium intensity, floral with red cherries, strawberries, roundness with light vanilla scented biscuit, youthful to developing.
The wine is dry (6g/l), medium body and intensity, medium alcohol (12,50%), medium acidity, fruity and balanced, mainly red fruit, red cherry, strawberry, well integrated CO2 contributes to texture, round and biscuity due to yeast, med+ finish.
Very good quality, premium price, drinking now.
I can't help the feeling that there was something missing here.

Salmon color. Perfumed nose. Complex, balanced (rich fruit and minerals), with a fine structure. A gorgeous wine by this grower.

Overall: This is a lovely rose. It's very well balanced with a nice freshness to it. I also love that this is 70/30 Chard/Pinot and that shows through very well too.

Consistent with my previous notes and remains strong at 94-95.
As alway, long bubbles, crystal clear pink/rose color. Long, long long finish... light fruits and blossom smell, on the dry side. This rosé gives the best return for taste
(had it at EMH vertical as a starter)

Taste: Medium/full bodied with high acidity. The structure is extremely noticeable, but it doesn't come off as too imposing. Beneath the structure lies a classy feel with white florals, minerals, strawberries, citrus, and some yeasty notes.
Overall: This was disgorged on 12/13. This bottle could use a couple of years to fully round into form. Still, it is quite good right now while having the room to improve.

Light salmon color with a bit of copper. Very fine bead. Medium-low dosage, crisp, med-plus acidity. Fraises des bois, roses, yeasty, mineral. V good rose champage, esp for the price - will restock

Nice floral, currant and kirsch on the nose with grapefruit and a hint of ginger. Good minerality from the Chardonnay also very dry.

I was considering for a while to increase the grade on this one to 95 (see previous note on this one), so I decided to put it up for a challenge in a French place. The verdict was clear, and all thumbs up. All participants plus the sommelier have voted thumbs up:
Small, long and stable bubbles, crystal clear pink/rose color. Long, long long finish... light fruits and blossom smell, on the dry side, but not as dry as the 2002 Pierre Paillard, for example.
Foods: Super good match to the fish dishes selected for dinner, and superurb match with Tarte Flambée the participants shared for appetizer. The vote of the people was: Bring more of that one.
So, to conclude: This Pierre Paillard Brut Rosé gives the best return for taste, and for value (cost) I've had in a very long time. It has a positive grade prospect (94-96) and I would say that if it keeps developing the way it is, it should make people happy for many years to come (assuming we won't finish all our bottles :D)

Tasted it twice this month (first time on June 2nd). My impression is just getting better. The color-Reddish/pinkish. Lots of bubbles, very unified and long. Bubbles remain even after having the glass stand for a while stable and unified. Taste of apple, a touch of hazelnut. On the dryer side makes it a perfect match with light dessert, fruit or even japanese dish, though I would take it more with the first two. I think this one is built as a winner, very stable, and I updated the previous score (93) to 94-96. I vote with my wallet, and bought a case of six.

Pretty pink in color, this lovely Champagne featured dominate notes of strawberry and yeast. The acidity was present but not austere, and overall, this had depth and balance. Very enjoyable.

Colgin Dinner with Ann Colgin (Les Amis, Shaw House): This was very good. It had a beautiful nose, with rose petals and cherry fruit scents wed to more savoury aromas of earth, white meat and slightly browning appley notes. Very nice - there was a lovely umami-driven depth and complexity to that nose, a bit of surprise for an NV. The palate, on the other hand, was still very fresh and zippy. There was perhaps a bit less depth and development than suggested on the nose - but this was all about elegance, balance and clean focus, with really nice, precise flavours of cherry and fresh green apples moving into a citrus, lemony finish rounded off by a very fine, almost lacy mousse. Medium-bodied, but yet there was no lack of complexity or interest with the wine. A really nice, lively start to the dinner - I could drink bucket-loads of this.

Good Yeasty Character, Red fruit strawberry but not bright/youthful, a nice mellow roundness dash of almonds

conc: This wine is stunning, from start to finish, it has it all, its together seamless. Pairing with a smoked onion garlic caesar salad with sage butter chicken, AMAZING especially with the garlic
