Nebbiolos, white truffles, Volume VIII (Chicago, IL): Served double blind. All roads lead to Burgundy. Unmistakable, intense stem inclusion on the nose. The perfume here is absolutely stunning; the palate a little bit of a let down after the nose (but that's more a statement on how good the nose was). It didn't have quite the weight and density of a grand cru, but just given how good this was, it was almost a bit silly to think that this would have been but a villages wine. Bright red fruit and very much acid-driven. I guessed this was from around 2000.

Wow, drinking so youthfully with fruit weight and richness that drinks above it's village level. Gorgeous stem spice aromatics and nuances on the palate. Terrific.

With a Sunday meal. Upon initial opening, a little funky and tart. After an hour+ in the decanter, this was really quite nice. Sweeter fruit with an almost Chambolle elegance and a hint of "Dujac" spice that led one blind taster to suggest this was a Vosne 1er cru. Nice structure, but without the tannins I expected for a '93. Continued to improve with air and food. My only bottle; I don't see a huge upside for this one--for drinking now.

This was essentially a fresher, more substantial version of the ’88. I actually liked it better, and it’s in a great place right now. Also, a funny story about this and the preceding bottle. A cute young server at the wine bar/restaurant was really impressed by this bottle and the ’88. She said that she had no idea wine could taste like this. So, my friend invited her to the Dujac Grand Cru dinner that night! Pretty fun to see her reaction to bottles several steps above these.

Consistent with prior. Dark cherries on the nose, with that great unmistakeable dujac spiciness on the nose from the stems. Not sure how much more development this will show, but it certainly has tons of life, no rush at all for the remaining bottles.

Popped and poured into a decanter; drank over the following 4 hours. Nose is very dujac - dark cherry and a stemmy spiciness. A touch of brett like most of the 1993s but in a good way. Still quite young, with good tannins and acidic structure. Long mouthcoating finish. Very solid.

Cote de Nuits Tasting - Dujac -v- Grivot (Mercer Hotel, Dublin): The first domaine wine from Dujac this evening. A mature tawny/garnet colour; some fine sediment (an unfined and unfiltered wine). Lovely nose of forest floor and some dried fruit. Floral notes also, which become more pronounced after 30 minutes. A stylish, vegetal/mineral palate. Exceptional balance and length - a lovely seam of acidity keeps everything fresh. This is mature and drinking well now. No rush to drink up either. Fine.

Deliciously mature village wine. Plenty of beef stock to the aroma along with some sappy lift and a wisp of smoke. Vinous and plush in the mouth with a nice savoury edge and a refreshing snap of tart cherry to the finish.

Dark ruby with slight lightening at the rim. Very Dujac. Nose of dark cherry, allspice, and earth. In the mouth, very stemmy. tobacco enters in addition to the above, and the cherries and spice dominate. Nice, long finish. Doesn't have quite the concentration of the Charmes drank last month, but very good nonetheless. Almost a junior Charmes. No reason to rush and drink up, but I'm not sure it gets any better than it is now.
