Was in an excellent place, truly. The fill seemed marginally lower that I would have liked, but any hesitation dispersed the moment it hit my glass. The oxidation had mellowed out drastically, the power still gripped you, but it lead into a very hazelnut/walnut/butterscotch blanket, that really lingered. Gorgeous weight. Montbourgeau rarely misses, and this was a brilliant bottle.

Tasted blind. Oxidative notes, almonds, cheese, and lemon are some of the flavors on the nose. Super interesting and complex. Nice acidity with lemon, more nutty notes, and a nice, long finish. This tasted like a high quality vin jaune and reading now that it's Chardonnay aged for 4 years sous voile, it kinda makes sense. Excellent wine.

I like this a lot. Light 10k gold. The nose is expansive with yellow fruits, walnuts, raw honey, Fino sherry, black peppercorns and a squirt of lime. Oxidative yet filled with fruit. Bright, deep and lingering. Will wait a day or two to taste again as I sense this is really tight. Lots of potential. (92+?)
Day 3 - this has only gotten better. Deeper, more rounded. With the same great intensity. Just super.

Oxidized Chardonnay fruit flavors of old champagne with plenty of acid and the nutty flor characteristics of fino sherry. Went great with hard cheeses. Definitely a head-turner at our Jura tasting.

Evaluating on day 2 (stored refrigerated overnight, full refill 500ml bottle). Lots of oxidative, sous-voile, nutty, sherry/flor, cheesy character, together with sour-orange/lemon. Tart, grippy/astringent acidity. Tasty and fun to drink, with plenty of character and typicity. Quite enjoyable (if you like the style).
Day 3 (stored refrigerated, with some headspace in the bottle): Better still, with additional walnut/tobacco/sherry depth and complexity. Intense, complex, delicious, and with Comté better still.

5 year sous voile. Chardonnay. Intense oxidized aromas of walnuts, ripe lemons, overripe apples and diesel. Dry, full bodied, high acidity, medium+ intensity and a rather long, slightly tart finish. Tasty!
