Monthly tasting - Cabernet Sauvignon / Blends (JM (SL)): Tasted blind, under cork. Almost opaque and without any bricking. Wears its Penfolds origins boldly, with ripe blackcurrants and prominent toasty burnt oak notes. Chalky mid to full-bodied tannins (likely a good dollop of added tannins?). Persistent blackcurrant fruit. In a good spot and will carry further ageing, although suspect it will just mainly soften. Should go another 10 years comfortably. [DS]

Decanted and left to stand for a couple of hours, leaving a small amount of sediment in the bottle. Deep red in colour, with a subtle fruity nose. Very smooth in the mouth, not noticeably acid or astringent, and matched perfectly with a roast leg of lamb. I only wish I had another bottle stored away. Perfect for drinking now.

Translucent garnet with a touch of brick. Muted nose; blocky in texture with broad chalky tannins, big orb of dark fruit on the midpalate, with air develops some Chinese medicine notes. Some bitter notes emerge as the wine warms up, better to watch serving temperature on this one. Probably needs another 5 years or so for the tannins to recede somewhat and the fruit to unwind. Professionally cellared since release.

Well stored since purchase (on release) and the cork was perfect with almost zero wine penetration. Decanted 3h prior. Very dark, opaque colour. Restrained nose but spice, rather than fruit, came through with time. The palate was full of dark berry fruits - blackberry, blueberry, some dark cherry. Soft with totally integrated tannins. Good with food (rare sirloin) but we kept most of the wine until later. It was smooth, with an inky character developing on the palate before the fruit kicked in. Quite long but, even given a few hours to open, it was not the mind-blowing Cabernet I expected after the remarkable ‘96 and ‘98 we have loved in the past. Lovely, soft, balanced, enjoyable Cabernet but without the expected complexity, and not a great 407.

Surpassed my expectations. PnP. Very dark still with faint bricking at the rim. Black fruit and menthol nose. Blackberries on the palate. Tannins fully integrated. Lengthy finish. No need to rush to open but no need to wait either, drinking very well right now.

This lovely wine was opened with our first dinner for 2020. We were a little nervous after seeing the crumbling cork and gave the decanterd wine two hours breathing time. Well worth the wait. Smooth, soft tanins, slightly peppery. Chef Rob served up a tasty rib eye on the bone which was made even better with the accompanying wine. Still a couple of years left on the wine, but will it get any better? Drink it now!

Purchased 2007 for $29, now the current vintage retails for $75 - $80. Hmmm... Anyway, this is in a good place now in terms of the optimium drinking window. Loads of blackcurrant fruit burst through in my glass, framed by a touch of mint and led pencil. Quite smooth to taste; with sweet berry flavours, framed by an undercurrent green note. The tannins have mellowed somewhat, but still evident. Only knock on this is, it comes across as a bit one dimensional and fruit forward, lacking depth. Having said that, found it immensely drinkable.

NobleRottersSydney - Christmas Lunch 2014 (Greg's place): {cork, 14%} Smoky currants; dark dry flavours too; here the oak seems to mesh with the black cabernet fruit instead of clashing – easily among the better 407s I’ve tasted. Medium-bodied, with a medium length finish; medium powdery tannins; a somewhat restrained yet assertive cabernet. Pretty good; give it another ten years I’d say. Very pleasing.

This is drinking fantastic right now. Black currant, blueberry, vanilla. Deep, deep ink coloring, almost black. Nose is surprisingly light and airy in a way, yet it coats your tongue. Smooth and seductive. Hard to pick up all the flavors, very complex. A joy to drink.

Very dark. I really enjoyed the dark currant and cassis fruit notes. This was decidedly peppery and added an ash note on the nose. Unfortunately, this gained astringency with air. The mouthfeel stayed sleek, but the overall feel was harsh.

Enjoyed over 2 nights, night 2 showing the best. I've had this purple-cored lovely several times in the past 4 years, and I'm here to tell you, it hasn't missed a beat - it's ageing very slowly, very gracefully. Aromas of black currant, mint, graphite, the slightest green peppercorn note, pie crust, herbs and vanilla. Fantastically complex, notwithstanding its price-point. The full-bodied palate is layered, deep and most enjoyable. The acids take pause before lifting the fruit and fine-grained tannins, extending the pleasure. This is a textbook case of a wine that should have been bought by the case, and not by the bottle. My 4th time now, and it's as fantastic as ever. Recommended+, 14,5% abv, drink thru 2018, score: A-

Slow O for 3 hrs. I've had this wine about 7 times now since release and this was the poorest showing yet, hence no rating. Lots of candied cherry, approaching a cough syrup state, but it seemed to come and go. I've really enjoyed this wine over the years and have found it to be consistently good and always a solid QPR. I've got one more left that I hope returns me to the purity and structure I so admire about this affordable, well-made Cab. 14,5% abv
edit: day 2, this did a near about face when served at 65F, very pure, very smooth and rich on the back palate. Attractive for the first glass, but it began to change as the wine approached 69F. A temperamental sod :D

Dark purple, opaque in color. On the initial pour, deep, dark grape and berry aromas with a slight hint of vanilla. Tastes of oak, pepper, and honeysuckle. Opened for 45 minutes, but didn't decant. This may do well with another year or two in the cellar.

Deep inky black juice with thick legs...a very deeply (not over) extracted and concentrated juice.
A nose the jumps out of the glass of cassis, blackberry & tar. Deep, rich blackberry upfront with vanilla tannins, smoke, white pepper and a touch of tar. Full bodied wine, great mouth coating and a complex strucutre - medium long finish.

A pop and pour. Definitely not your Napa Cab. Much more on the Shiraz playing field in fruit and structure. Beautiful deep red color. Lightly oaked with huge fruit on the front end - plum and blackberries, hint of tobacco or leather, with a drier finish. A little potent on the tannins on a pop and pour. IMO drinking young right now - needs about 3-4 years of cellaring minimum, but solid enough structure to go a good 10 years if cellared properly. Decanting for about 30 minutes would definitely help if you insist on drinking now.
A fine example of new world style Cabernet Sauvignon for a reasonable price point.

colour: welchs grape juice. dark, purple, lighter miniscus. bouquet: Nose full of dark plum, blueberry jam and blackcurrant, in that order. Some leather. flavour: nice mouthfeel. surprising amount of structure here along with all the fruits - nice balance of acidity, fruit and tannic bitterness. Missing for me are the tobacco and cigar box, but it may be that this just needs some time to show it. Medium, pleasant finish.
I think this will age well. Great QPR, I'd be happy to serve this to friends and family.
after an hour decant: still lots of dark plum and cherry up front on the nose, more leather, tobacco and spice now. lots of fruit in my mouth, seems like more astringency now. Very juicy, little hollow in the mid palate, but overall nice flavours. I get more tobacco in the finish, which is still about medium in length.

Opened for 1 hour, didn't decant. The wine is very dark, concentrated, opaque. The nose is open, pleasant but I find it dominated by green peppers. The mouthfeel is very nice, but the finish is almost overly herbaceous (green peppers) and with a clean finish. Perhaps a bit more acid than I might like but this went away after a few hours. Not a frui driven wine and not much in the way of tannins. I would not describe this wine as very balanced or complex, but it is tasty.

Wonderfully dark and meaty. Nose has plenty of fruit without being "fruity". Deep structure with a sense of earthiness about it. Decanted this 30 minutes before serving, so it was open and easy to drink. Plenty of finish. Will definitely be adding more.

Dark purple, opaque in color. On the initial pour, deep, dark grape and berry aromas with a slight hint of vanilla. Tastes of oak, pepper, and honeysuckle. Opened for 45 minutes, but didn't decant. This may do well with another year or two in the cellar.

A great AU cab that doesn't disappoint.
Deep inky black juice with thick legs...a very deeply (not over) extracted and concentrated juice.
A nose the jumps out of the glass of cassis, blackberry & tar. Deep, rich blackberry upfront with vanilla tannins, smoke, white pepper and a touch of tar. Full bodied wine, great mouth coating and a complex strucutre - medium long finish.

A pop and pour. Definitely not your Napa Cab. Much more on the Shiraz playing field in fruit and structure. Beautiful deep red color. Lightly oaked with huge fruit on the front end - plum and blackberries, hint of tobacco or leather, with a drier finish. A little potent on the tannins on a pop and pour. IMO drinking young right now - needs about 3-4 years of cellaring minimum, but solid enough structure to go a good 10 years if cellared properly. Decanting for about 30 minutes would definitely help if you insist on drinking now.
A fine example of new world style Cabernet Sauvignon for a reasonable price point.

pop n pour:

bouquet: Nose full of dark plum, blueberry jam and blackcurrant, in that order. Some leather.
flavour: nice mouthfeel. surprising amount of structure here along with all the fruits - nice balance of acidity, fruit and tannic bitterness. Missing for me are the tobacco and cigar box, but it may be that this just needs some time to show it. Medium, pleasant finish.
I think this will age well. Great QPR, I'd be happy to serve this to friends and family.
after an hour decant: still lots of dark plum and cherry up front on the nose, more leather, tobacco and spice now. lots of fruit in my mouth, seems like more astringency now. Very juicy, little hollow in the mid palate, but overall nice flavours. I get more tobacco in the finish, which is still about medium in length.

Opened for 1 hour, didn't decant. The wine is very dark, concentrated, opaque. The nose is open, pleasant but I find it dominated by green peppers. The mouthfeel is very nice, but the finish is almost overly herbaceous (green peppers) and with a clean finish. Perhaps a bit more acid than I might like but this went away after a few hours. Not a frui driven wine and not much in the way of tannins. I would not describe this wine as very balanced or complex, but it is tasty.

Very good, had this after a Sequoia Grove and it wasn't quite as good (but to be expected). It was a nice change from the typical Napa style cab, it had a little spiciness to it.

Wonderfully dark and meaty. Nose has plenty of fruit without being "fruity". Deep structure with a sense of earthiness about it. Decanted this 30 minutes before serving, so it was open and easy to drink. Plenty of finish. Will definitely be adding more.
