Aromatic nose of Granny Smith apple, sea shell, lemon peel and saline. Apple, lemon peel, sea shell and saline on the palate. Very long, lean finish with excellent acidic balance. A great expression of terroir. Served with shrimp scampi.

Served by the glass. A creamy wine, aromatically complex and very long. At the same time it is tender, absolutely mineral, tasty, deep and elegant. You can't ask for more. Not a single taster found Nathalie's wine superior to this. Not at all. Class in the glass. GC quality.

2018 Bouchard Tasting (Off-Premise, Chicago, IL): Nose: The nose is exuberant and fresh with pears, apples, peaches, white flowers, crushed rocks, saline, and some apple blosoms. There is excellent depth and balance with an open-knit take.
Taste: The feel is Medium bodied with crisp, medium+ acidity. The feel is elegant and refined with pears, apples, peaches, white flowers, crushed rocks, and saline.
Overall: This is drinking great right now, but it can benefit from a few years of age. It shows off more upfront fruit as the vintage seems to be showing but along with good depth and balance.

Bouchard 2018 Tasting (Chicago, IL): Walk around tasting. fat start for Chablis, but that's the vintage's youthful exuberance. Ends more brightly with lemon peel and lemon curd. 90-91+ point potential.

Thoroughly enjoyable Chablis. Ripe fruit, strong salinity, and ample acidity. Could last much longer but wonderful to drink now!

Annual wine trip; Bourgogne & Champage with Bas; 6/14/2023-6/18/2023 (France): [Tasting at Domaine William Fevre, Chablis] Warm year, riper style. Apple, pear, stone fruit, minerality, some first development noticeable, hinting on what is yet to come. Medium+ acidity, long finish.
First year they stopped ice filtration to remove tartaric crystals as it lowers the acidity

La Paulée de New York Grand Tasting (Pier Sixty, Chelsea Piers - New York NY): Walk around tasting. Riper start, tightens up quickly with classic styling on finish. Maybe slightly awkward right now, but very good value 2023 forward.

Really in the zone now, delicious from first pour, fattened over an hour. Fairly Energetic with delicious stonefruits and sea shells.
