Belated birthday wine session at Wimborne. Drank in Gabriel Standart. Appearance is clear, medium intensity, rusty red gold colour. Thin legs. Fast fading bubbles. Nose medium+ intensity, with aromas of caramel, integrated toasty oak, nutty brioche, roasted brown rice, vinous red cherry plums and red apples. Developed. On the palate, dry, medium+ acidity, medium- alcohol (12.5%), full body. Medium+ flavour intensity, with flavours of sweet caramel, toasty oak, nutty brioche, vinous red cherries, plums, red apples, mushrooms emerged with more air. Long finish. Excellent quality. Very very complex, both the nose and palate. Drinking at peak. 80% Chardonnay and 20% Pinot Noir.

Dinner at S.K.Y. (S.K.Y. restaurant, Pilsen, Chicago IL): This is showing some age to the nose, but I also feel like my palate has well shifted away from aged champagne. It shows off good depth with buttered toast, bruised apples, cinnamon, biscuits, dough, spiced pears, quince, nougat, vanilla, and some oxidative notes. The Medium bodied feel is balanced but also leans into the more aged aspects of the nose while there is still ample, high acidity that has integrated very well. For me, this may be slightly past it’s peak. For those that want something with more age on it, it’s right in that zone. It’s a choose your own adventure here.

Tasting older than expected, the wine focuses on its lush, ripe, slightly honeyed, sweet, fresh, red cherries, strawberries, flowers, touch of orange citrus and brioche. The effervesce was soft and silky. I am not sure there is much to be gained from further aging here.

FIrst, the color. This may be the most beautiful wine I have ever had. A bright copper-orange that utterly captivated everyone. Remarkable. The bubbles are starting to transition to that more gentle phase. Nose was candied strawberry and brioche, some lemon zest and maybe grapefruit? The palate is gentle and delicate. This isn’t a blockbuster, but that’s not what we were looking for: Some strawberry, brioche, that grapefruit again, a hint of some greenery, a touch of tartness — cherry, lime, and then toasted finish which is long. I’m not a champagne expert, but this was fabulous.

Rather surprised at it's leanness. The aromas were mostly of fresh red berries. There was some earthiness and slight rustic character in the wine. The palate had slightly sweet red berries, more earthiness, sous bois and floral notes. Texture was really creamy. Not as good as their normal champagne.

Welcoming Adam to Singapore (Luke's Oyster Bar, Gemmil Road, Singapore): I thought this was an excellent Rosé. It had lovely minerality on the nose, leading into deep aromas of earth, some berries and cherries, a hint of drying flowers and then some game meat and sweeter strawberry fruit coming out at the edges. Very red Burg-like in the way it came together, with earthy scents spiked with red fruit. The palate was rich and layered, with tons of depth in its strawberry and raspberry flavours, along with some perfumy flowers and more earthy, forest floor nuances on the mid-palate. The mousse had softened into a luxuriously creamy mouthfeel, especially noticeable at the long, long finish, where layers of lovely minerality wrapped the wine up. Harmonious, deep and balanced, this was a very complete wine. Gorgeous stuff.

Dom Perignon Tasting at CW Alcohol 12.5% WOW! This is wild and exotic! Light salmon pink color. Not as tight as Oenotheque, highly aromatic of florals, red pinot fruits and some wild scents. Vigorous fine beads giving a big explosion on the palate but quickly round up and turn to gentle touch, almost creamy texture that giving pleasure and showing earth, soil, juicy red cherry fruits, spicy finish with nuances of earth and oak resonant to a very dry acidic finish. This is a big wine with mouth coating concentration and extraction, but also immensely balance, with great precision and finesse. This also more integrated compare to the Oenotheque
Drinking from a Burgundy glass, more expressive, more florals with rounder mouth feel and great depth.

Wild stuff; light amber-pink in colour with a seamless combination of red berried fruit, brioche, cream and marzipan notes with a surprising saline element coming out on the back end. As with the other DPs, the mouthfeel here is just as striking as the flavours themselves - it's very polished and glossy with a real lightness of touch and fantastic balance.

Bright, amber-tinged pink with pinpoint bubbles. Deep, smoky and complex, with a kaleidoscopic bouquet incorporating wild strawberry, peach, apricot, chestnut honey and cured meat. A firm, strikingly concentrated midweight with powerful flavors of orange peel, raspberry, redcurrant, baking spice and smoked meat and gentle supporting acidity. Smoky, sweet and long on the back, with a slowly building impression of acidity that suggests this will be a long ager. A stunning Champagne.

Masters of Wine Champagne Tasting (San Francisco, CA): Exceedingly superb! I’m not really a Rosé aficionado nor am I a big Dom fan so I wasn’t expecting to be blown away quite like I was here. Pale pink color. Strawberry and floral aromas. Ripe strawberries upfront on the palate which then develops an elegant vanilla nuttiness. Slightly creamy medium-long finish. Medium bodied. Incredibly elegant. Still quite young – too young, in fact, as there seems to be a nearly perceptible refinement that’s waiting to emerge – this will continue to develop beautifully over the next decade. Altogether lovely, but the exorbitant price makes this difficult to recommend when so many Champagnes of similar quality are available at a fraction of the cost.

Soft red fruits on nose and palate. Quite a persistent finish but a little bitter/awkward/disjointed at the moment - too young? You can clearly taste the tannin from the red wine in the blend. Needs a long time.

Tasted at the BBR & Moet Tasting "The Three Expressions of Dom Perignon" presented by Richard Geoffroy. All that you expect from it is present. A wine with an inherent sweetness and all the finess you expect. Needs time to develop in the glass.

Drank at a Sherry-Lehmann/Dom Perignon wine dinner at Fishtail - The bottle had great color, but there was no mousse or bubbles. Texture was tough and hard to get much fruit. I thought it might be an off bottle and it was served way too cold. I will have to try again to confirm.

Lovely copper/salmon color with spice box and wild strawberry aromas, adding a lovely layer of mocha as the wine breathes. Great vinosity and grip with overtones of lemon peel and raspberry. The ripeness of the 1998 vintage is evident in the fruit intensity and creaminess of the wine on the palate. Vanilla and fig nuances emerge on the rich palate. A strong, vinous rosé, almost Burgundian in style.

At the 2008 Post hotel Wine Summit in Lake Lousie Alberta Canada, We were fortunate to have Pascal Pecriaux who has been with Dom Perignon for thirty years. He walked us through three vintaged DPs, one DP Rose, and three of their Enotheque. It was a tough way to start a Saturday morning at 9:00, but I was up for the challenge. The 1998 DP Rose came as surprise for me. I am not a rose guy and did not expect to see one at this tasting. I was pleasantly thrilled by this glass of wine. The floral aroma led to a nice Chard/Pinot blend that was very dry and tart. The first sip almost forced a pucker. It was a fun glass of Dom.
