Pink. Herb and black fruit. Light with a lovely layer of flesh. Dry, licorice and fruit that makes it feel as though you are drinking a red wine. Excellent.

Had with grilled salmon. Drank at both cellar temp and quite chilled. Chilling didn't do too much harm. Pale, aromatic, complex, and dry. Strong sense of strawberries. Lovely, and will go for years, if I can keep from pulling the corks.

A private dinner (Restaurant Zoldering, Amsterdam, NL): Salmon pink colour with a touch of orange; quite full-bodied and quite weighty with its 14.5% ABV, soft but fresh, lemon curd, flowers and candy, crushed red berries and bitter orange, finished with some back-end heat. I prefer Pascal's (12.5% ABV) rosé in this vintage.

A serious and beautiful rose. Tart strawberry, round mouthfeel. My guess is that this will do well with both age and thoughtful pairing. Had it with seared sushi grade tuna.

DO NOT SERVE ICE COLD... NOT THAT KINDA ROSÉ... aromas of overripe red cherry and red plum, a little juicy orange, delightful nuances of minty herbs, pine needles, toasty green oolong and mushrooms... complex, serious, unctuous and dense, this opens up steadily. Spicy, thick and structured on the palate, fresh enough, with a solid core of minerality, there is elegance and lift, but the overall impression is far from zippy. This is more of a fall or winter pink wine, and would be great with braised pork or mushroom risotto. Super long and rich, lots of ripe fruit, spice, dried herb and flower notes linger. I think I'm catching this in an awkward phase... it might have been better last year and might be best 5 years from now... who the heck knows! This will surely be worth keeping a few more years. Word is that it can last a couple decades. I could see that...
