Decanted for an hour before a wild venison chop dinner. That was about right. The wine opened by that point, and stayed at that plateau for the next 3 hours, turning slightly sour by the end. Worked well with the wild venison, which was a superb cut. Leather and dark fruits dominant in nose and on the palate.

Excellent accompaniment to the lamb roast at the end of the evening. Good color, the nose opened up after about 15 minutes. Classic St. Estephe. Dark fruit, earthiness, a tad musty but in a very good way. Last wine (before port) in a long list of excellent wine experiences.

Fine, old-style wine. I suspect this will continue to improve for more years. Classic St. Estephe nose and dark and mineral flavors. Try another bottle in a year.

Hmmm. A bit of oak here for sure. Sweet vanilla and white chocholate. But there's also good black fruit, mild earthy notes and a very unique underlying minerality; chalk and clay in my glass. Feels rather distinct, a good expression of St Estephe. I'm sligthly worried about the dry finish - there's a very salty, dry end to this wine. The question is if the oak will be absorbed or if the wine will dry out with further aging. In the 4 hours I had this open, it showed best in hour 2-3.

Last bottle. On the downslope. Still good balance, some fruit.
