We were very happy with the 2006 Louis Michel Chablis GC Vaudesir. Yes it has been fully mature for many years but on the basis of this the end of its drinking life is still a few years away. It got better and better over the course of the evening. It was golden, rich and complex.

Classic Chablis aromas and flavors of apple, pear, lemon peel and sea shell. Elegantly balanced between oak, acidity and mineral character. Very long, crisp, dry finish. A gorgeous wine. Served with corn chowder,

I enjoyed this wine, no formal notes. Precise, clean, linear. Hint of oak balances the acidity. Showing a bit of age that evolved into a clean lingering finish. I'd drink this up...

PnP, served with a lemon risotto and finished over 2+ hours. Lemon, stone fruit (peach and appricot), red apple. Nice balance. Still fresh which is a plus but lacks a little wow factor.

Served slightly above cellar temperature. Aromas of peach, pear, lemon peel, flowers, and sea shell. Peach, pear, and citrus notes initially on the palate; leading to a long, crisp, mineral-driven finish. Layered with nice acidity and balance. A great expression of the terroir. Paired well with pork scaloppini.

This time, at Indian Pass Raw Bar, but oddly with Texas oysters rather than Apalachicola ones. Precision and finesse. Singing stuff, and right in tune.

PnP, consumed over ~3 hours on a hot summer night. Lemon, ocean, white flowers, minerals. A little sedated and lacking some of the crispness I like in Chablis. Nice but not wowed.

Wonderful nose that expresses terrior; smooth lemon curd with notes of soft peach and honeyed tangerine; layered with long complex and elegant tones; goes on and on.

Wonderful wine. Lemon meringue and flinty seashells on both the nose and palate. Great weight and solid finish. Could have used a bit more acidity, but in all fairness I had this right after a really fresh and acidic muscadet.

From 375. Lemon, sour orange, and seashells on the nose. Citrus, saline mineral, and smoky spice flavors. Balanced, smooth, and creamy on the palate. Excellent acidity and a long finish. Drinking well now from this format.
