Second time having this bottle, the experience is quite difference. The same explosive fruit at the beginning. Not as yeasty as last time I had it, but the nose change over time dramatically. Yogurt, cheesecake, apple tart, wow.

Golden color with a very slight pink hue. Typical powerful nose that blends ripe strawberry and brioche notes. Wonderful Pinot Noir. I’ll say it again - for my palate, this is just about perfect champagne. A wine that is equally comfortable with food or on its own. Combines power, purity and precision. Long. Delicious. (95)

this came off as more precise and elegant than the 18, paler in colour but no less in concentration of fruit. Nuttiness, spices, vanilla, white orchard fruits and lemon curd coming through very well. Bubbles a little aggressive, but fine with me

Dinner (Landhaus Bacher, Mautern, AT): Glass: Zalto Universal I needed a wine to go with the full menu and my choice was this beautiful bottle of bubbles. Vintage 2017, disgorged 03/2021. Clear, pale salmon color. Beautiful harmonious and round nose, deep and multi-layered, some noticeable oak. On the palate certainly more wine than sparkling in character. Of course with a wonderful fine and long mousseux, but it had the caracter of a very good Pinot. Fine red fruit, salty, dense and deep. Very elegant and balanced. Long, fruity mineral finish. Great bottle of Champagne. 95

not blind opened 1 hour before. I prefer his BdB. You feel the red fruit aromas from the PN grape. Great density and but missing a bit the elegance maybe due the vintage. 93-94

From a restaurant in Odense, Denmark. Nose more muted than the ‘18 I had awhile ago, but I think we started out with this too cold. Much improved as it warmed. Very elegant, flavors of apple, pear and lime. I did not get as much red fruit as I have on other vintages. But overall just lovely.
not blind Very accessible, winey, but not too oxidative. The Balance between power and finesse is nearly unmatchable in champagne. Some red berries, lime and spicieness. 95
Base vintage 2017, bottle 1292, disgorged 03/2021. Rich and powerful, pinoty (duh), red apple and berry fruit, earthy notes. Delicious and interesting. I liked this a lot better than the 2015 Maillons.

No. 1206, disgorged 03/2021, decanted. Quite sweet, hard to think this is extra brut, with apple acidity and yellow fruit but sugar-like. Very large in structure. 92-93

Bruised apples on the nose as you would expect for a Blanc de Noirs. However this is not prototypical, this is much better. First nose is expressive as is seldom the case for Champagnes. There is a peppery note too. May be ginseng too. It is stern and serious with the heft of a BdN but there is a fruitiness around the austere core. This is layered on the palate and ends with nice acidic lift. Bubble remains sufficiently persistent one hour after opening. If availability was not an issue this would be a staple in my cellar.

Had it at a restaurant. Very yeasty on the nose, probably the most I have had. It also has an intensely fruity nose with a hint of nuttiness. On the palate, great structure with tons of bubbles, and great acidity but the burst of fruit flavor makes it very approachable and feel less dry. A very good wine that will surely improve given the fine structure and strength of bubble and acid.

Piemonte: Back to the truffling!; 11/24/2022-12/3/2022 (Wineries and various restaurants): Been some time since we’ve had a Ulysse Collin - used to see them all the time and more recently they’ve been highly allocated almost impossible to get. I always really enjoyed the wines and thought they were a great value back in they day. I don’t know that they’re quite worth what they are trading for now. It’s a good wine. Interesting and sharp and precise. A bit more spicy in style. Young and perhaps a touch more primary. We left it out of the ice so it had time to open more but it never got quite as expressive as some of the newer growers can be. Still - I enjoyed it and a treat to get a chance to try it again.

At restaurant, no notes. Base 2017, did not note disgorgement but assume 2021.
Excellent wine, displayed surprising levels of what I would typically associate with more advanced maturity - yeasty depth on nose, light brioche notes and nuts on palate. The only criticism I can recall was that, at times, it perhaps tasted as though there were two wines blended into one - fresh youthful citrus and acidity on one layer, and then the bread notes on another - rather than one united entity. I wonder whether that is a result of the efforts in the cellar to create a wine that offers 'mature' tasting notes at a younger age. I do not know enough about Collin's methods to be able to say.
For my taste, Collin is the best of the new, so-called (somewhat incongruously) 'Selosse Disciples' - but, again, I do not have a handle on whether these wines can age and improve. Of all of them, I feel these show the most potential, but I find it very difficult to evaluate and I am not sure I would cellar these long-term (at least not at current market prices).

Deep golden color. Seems mature for age. The nose is filled with toasted brioche, chalk and white grapes. Mature fruit. Deep and winey. There is a red fruit note on the finish that really shines. A very mature rendering of this wine and I like it but glad I drank it tonight. Buttered toast with white grape jam. Yum. (94)

Base 2017, disgorged in 2021. I found this to be one of the most approachable and subtle Collin Maillons. Really lovely fruit and spice. Great with dinner. A certain softness to the wine that suggests prime drinking in the next 2-4 years perhaps

Base wine from 2017. No. 9747. Degorge March 2021. Light gold. Fine bubbles. The nose is confident, exhuberant even, showing notes of honey, brioche, almonds, marzipan, and salt. On the palate, the wine’s elegance becomes more evident. Chalky saltiness, bright, crisp, and fresh. How I wish I had one (or a case) in my cellar to experience this wine’s majestic ride over time. Though, it would be an insurmountable challenge not to open them sooner rather than later.

Base vintage 2017, disgorged March 2021, bottle No. 2283, 12.5% ABV. This is huge. Dry but so rich and deep, intense apple and spice flavours, supported by deep minerality, quite monolithic at present but the power and balance are very impressive. A big and brooding wine, displaying a primordial energy which reaches great depths. At Bar du Champagne, Amsterdam, NL.

This was extremely tight and ungiving for about 30 minutes. Unfortunately, as this opened up and started to show some stuff, we had already kinda hurriedly drank it up. This is burly, intense, and forceful. Not an easy wine at this stage. Stash away for a couple years if you have some
