Overadvanced. Kept since release in a 55F cellar, then 45F for 2 years. Had about 30 mins to enjoy the balance of an aged chablis before the acid was overwhelmed by the nutty honeyed layers.

Note: I use the recommended scale, so 85 represents a very good wine.
Seemed to be humming right along despite the age. No signs of oxidization, still crisp. Good balance of acid and fruit, although a bit sharper than I prefer.
No need to hold, but no need to panic.

Very light color. Beautifully poised aromatics of seashell and iodine with lemony fruit in the background. Light, pure, and extremely elegant while possessing really authoritative flavors and enough sap to keep it from feeling meager. Crescendo of acidity and stoniness through the mid-palate and finish. This was thrillingly good, utterly satisfying Chablis lover's Chablis and pretty much perfect to drink if you're not in the mood for Grand Cru heft. Would love to find more of this.

Powerful acidity with light grapefruit like flavors. There is a touch of minerality but you have to look for it. The is lacking some fruit expression and depth. Would best be served with food so it doesn't have to carry the show. Acid freaks need apply.

Rob brought this over for dinner and we opened it with appetizers (trout and pesto baguette). I found it really quite excellent, with piercing acid, weighty mouthfeel and a welcome intensity of flavor. Wonderful, in fact. I would seek more of this out.

Chef Nita's Tasting Menu (Craig's House): No detailed notes taken. Nicely intense palate, but missing some of the zing and complexity of other 2007 Chablis I've tasted.

Wines with Nita's Tasting Menu: Light yellow color. Light nose with minerality. Grapefruit flavors on the palate with great acidity. Falls a little flat at mid-palate but finishes well enough.

Green-to-gold colored, with a nose loaded with citric notes and some minerality. Medium-to-full body, with a very tart citric profile on the palate and a medium-long finish. Probably best to wait another two years on this wine.

Quite lovely chardonnay for me. Little tart initially but grows on you and with a little introspection the fruit emerges and is a pleasure as an apertif or paired with an onion tart.
