  • Although not deeply experienced with serious rose, I would be tempted to look no further than this one. Very serious (without having to be comtemplative about it) and enjoyable. Very memorable.

  • I vote this wine the rose I would strand myself on a desert island for (as long as I had some!). Wax capsule, cork extracted easily and was barely wet. Pale copper color. A little smoke with fruit aromas. Explosion of flavors, with a touch of acid-balanced sweetness. Medium viscosity, but extra nice unctuousness and a longish finish.

  • Pulled from the cellar where it had lain since purchase. The wine is a lovely copper and orange color - without much of the usual light-red coloring one associates with rose. Wine should have been decanted as some sediment was noticeable; however, this was not possible given the transportation to Universal Cafe (here in San Francsico), where it was opened and served.

Table side notes are limited, but include: restrained nose with elements of chestnut and stone fruits. Flavors included an upfront sweetness, followed by meaty chestnut, more stone fruits, and a lovely restrained finish of perhaps citrus - more specifically grapefruit and a pinch of pineapple. Finish does have a touch of sweetness too, but it is enveloped by good drying acids that cleanse the palate. Thirteen percent alcohol and well balanced with the fruit flavors.

Served with Universal's little gem lettuce salad with tangerine, feta, walnuts, and coriander vinaigrette, plus a lovely roasted chicken with English peas, carrot puree, and corn meal onion rings.

PS I have been told that this producer's rose wines are now higher in RS. I hope this is not the case; nevertheless, I will need to find out and see if the style has changed much. Worth seeking out if you like an obscure Sancerre Rose.

  • Delicious with fresh red salmon. One of my favorite Rose's ever.

  • Pale peachy pink. Shy fresh flower and red berry nose. I worked very hard to discern that this wine was pinot noir, but it presented on its own terms. The entry is unabashedly sweet, overwhelming any more subtle flavors except for some (welcome) bitterness at the edges. The finish would count as the highlight, balanced white stone and red fruit with a decent tart zing. I thought this would be a good wine for a Spanish-style slow-cooker chicken dinner, but perhaps it better serves a light fruity dessert, such as sorbet.

  • This was an excellent Rosé. There was faint fruit on the nose and a significant mineral note. The color was very very light and a little bit orange. The taste also had a pronounced mineral note, a little grapefruit, and some soft berry. Quite a long finish. I served this with a miso glazed salmon file. There was a little bit of residual sugar in this wine and it went very well with the sweetness in the miso glaze (reduced sake and mirin with white miso).

  • Sweeter then I expected. Strawberries. Typical Cotat, though less then 2004

  • much sweeter and richer than I expected. I usually think of F.Cotat being the wiley one and Pascal doing the richer stuff. No matter. Delicious though lacking a bit of definition. Lots of strawberry and minerals. good finish. think I prefer the 2005 to this one.

  • Needs 1-2 years; too wild at the moment.
