This is the VORS bottling, need to enter this into cellar tracker properly when I’m at a computer. Wow what a nose, intense like an old cognac, Brazil nuts, Bone dry, lots of body, some earthy molasses notes, navy rum and waves and waves of nuts. Mainly Brazil. Intense but not overpowering. V. Good.

15 year old Powerful nose, like a cognac, hazelnut, toffee, touch of acetate. Orange peel. What a tang on the palate! Bone dry, salty edge. Lots of nuts, almonds and hazelnuts. Powerful wine, but not too challenging. Some earthy slightly dirty notes come through at the end. Great with hard cheese. Very nice. More at the amontillado end of palo cortado.

Spanish Dinner (Herald & Teni's Place, Hong Kong): An amontillado....this is the white label "Aged 15 Years". Deep golden almond colour. Nose is burnt Demerara sugar and toasted almonds. Palate is very bitter, like Anastura bitters. Not my thing and I couldn't finish the glass.
Praelum - La Casa de Vino (Praelum Wine Bistro): A strong reddish brown hue. Pronounced walnut aromas, toffee, some blue cheese mold, and even a nuance of shells and seaweed. Flavours are mainly briny, seafood, shells, walnut, hazelnut, and even a tinge of soy. A hard and edgy drink, but I do appreciate the complexity. Very persistent nuttiness and woodiness, lasting more than a minute

This was a text book Jerez, it has strong aromas of polished wood and nuts (hazelnut) on the palate is silky, smooth with a long finish. By text book I meant it was an educational bottle, on my first night of opening there was an unpleasant whiff, that I couldn’t get pass from. Two days later I took back the bottle to the retailer, upon retasting at the store the whiff was completely gone, the bottle became a true gem. I continued to enjoy the bottle over many months, an added benefit of the oxidized style

Sharp and assertive on the nose, with a woody/fruity note that hints at furniture polish but is nevertheless mouth-watering. Viscous, dense and dry on the palate, with bright acidity and lots of toasted nuts. This wine is beginning to show some serious age.

Opened at the end of Oyster Night in Pawleys. It's pretty hard to go wrong with any decently made Palo Cartado, and this was very enjoyable. That said, the Bishop is not my preferred style of palo. 21% abv and dark and brooding, this is a Palo that leans very far toward the oloroso spectrum. Happily, it is not without biologically aged qualities, especially salinity, but the oxidative qualities dominate to the overall detriment of the wine.
I still think Barbadillo is the best of the "industrial" sherry producers. For me, their Solear en rama leaves even Equipos Navazos' standard issue fino in its wake, but I don't think the Bishop is the strongest offering in their line. I prefer palos that have a more prominent biological component and grow darker and heavier only with exposure to (more) air. Still, this is a well crafted 750ml Palo Cortado for $40, and with the prices going up quickly on some of the nicer PCs, this remains a good value.

This was even better than I recalled from tasting it at the bodega. Fabulous nose, kind of like sea salt on top of brioche with a hint of caramel. Elegant complex taste to match. In terms of complexity, purity and sheer excitement this is world class wine.

Pungent, caramel, toffee; good concentration, roasted marcona almonds, walnuts, furniture polish, a bit salty, salted caramel. Dry, silky. Agree with the dried orange peel comments below. Not the best pairing, but good with corn chowder soup. Almost 20 yrs. old. VORS is bottled later and Reliquia much later from same solera. Largest producer of Manzanilla in San Lucar. Good price for 20 yrs old!

Clear and bright medium brown colour. The nose is clean and fully developed, showing pronounced intensity aromas of toasted almonds, hazelnuts, caramel, coffee, cocoa, prunes and nail varnish remover.
The wine is dry in the mouth with a medium acidity. It has low soft tannins and a high warm alcohol. It has a full body and pronounced intensity flavours. The finish is long.
It is a very good quality wine. It has a lingering finish and the very concentrated flavours balance the high alcohol. On the other hand, albeit it displays some complexity, a better example of this style would be even more complex.

Detras de todas las especias orientales y almendras amargas aparece un componente de sacristia, madera vieja, botas perdidas al fondo de la bodega, telarañas. El clásico y reconocible huevo al horno d los viejos de Barbadillo.
Agua de azahar y piel de naranja en su parte más amable.
Muy vertical, sapido y acido, para comer con él. Maderas viejas avainilladas, pistachos vienen y van en un final larguisimo.

Salty caramel and iodine, some walnut and old cask notes (more than I expected), but it was only open for an hour, and I bet it's capable of more. I thought it was more on the oloroso than the amontillado side, but it def has that orange-character that I find in a lot of cortados. Warming and satisfying.

Rare wine of palo cortado where the protective flor is lost while the wine becomes fino or amontodillo. Clear amber in color. Beautifully blended aromas of rich roasted nuts, hints of honey and toffee, and salty sea air. Moderately salty, roasted nuts, herbs, toffee, and slightly honeyed on the palate with a long dry finish. Crisp and yet deeper and fuller than a fino. Really nice, complex and interesting. Really good. Reminds me of a good single malt scotch but with less alcohol. 22% abv.

This is decent. A little sticky for me, and perhaps young-ish. I'd prefer to see more concentration and oxidation and less caramel sweetness. I'm not sure I could have called it as a Paolo Cortado rather than a slightly sweet amontillado - more intense than the Tio Diego, say, but not by enough to justify the price tag.

Ugly orange colour, almost an artificial one. On nose, oxidaded smell and on palate, hard to drink, alcoholic, without the shades by the wood. I trust that this bottle will present some evolution, because the first impression is quite poor. 2/1/09 According with the back label, Barbadillo house guarantees the quality of this Palo Cortado, despite it looks like not a "real one"; I mean, this wine seems to be created by men, not by nature or any chance. After almost a month, just a bit of evolution here. Not a re-buying for sure.

Nose of green walnuts, orange peel, sweet caramel, bourbon, iodine. Intensely concentrated on the palate, with sweet/salty apricot, walnut, Cointreau, a bit of heat. Very dry. Long, nutty, caramel-flavored finish. Excellent. This bottle lasted about 3 months from opening, showing a slow evolution away from greener, fresher flavors toward more rich, nutty, dried citrus peel. There's also a little more alcohol showing on the finish than a couple of months ago. Single malt whisky lovers, this is your sherry.

With time open in the fridge this has improved and sharpened its flavor profile; the green olive notes have transformed into something more resembling orange peel. Medium bodied, straw color. Also notes of saline, iodine, and wood, with some sweet/caramel on the nose, but really dry in the mouth. Long finish.
