Blackcurrants vanilla and some smokey spice notes on the nose, long firm tannins, not exactly ripe but not harsh and very good length. Hints of a mix of other flavours keeps the drinker interested. I’m not very experienced with Californian Cabs but this was good!

Decanted 1 hour. Madagascar vanilla, blackberries, dark plum and mocha on the nose. Medium to big mouth feel. Taste follows the nose, a big yet elegant Cabernet. This is not an over the top warm and high alcohol Napa cab, but a solid balanced wine with a strong backbone of tannins. 14,5% alc is exceptionally well integrated. I think this would pair great with a steak of high fat content, such as a ribeye. Very long and dry finish, it just keeps on going. Perhaps it was in it’s best condition a few years ago with more fruit left.

I'm a little curious as to what's going on at Stag's Leap Wine Cellars. There has been a general degrading of quality overall of their wines at the lower end of the price range. Artemis used to be my go to wine but was disappointed the last time I opened a bottle. Seems the same with Fay. Bit fruity, nothing offensive but nothing standing out either.
First impressions right away: Bright red cherry slightly overshadowed by warm oak, cedar, and pencil lead. Nondistinct earthiness lingers in the background. The lightness of this wine stands out in a wonderful way, this gives the impression of being a throwback to early Napa cab when ABV was lower and elegance was favored over modern-day power. A bit simple right out of the bottle but this is a compliment - the simplicity is pleasing and beautiful. Acid is balanced, tannins are very silky and mild/moderate.
30 Minutes after Open: Broader now, cherry flavors deepening. A touch of bell pepper and a subtle herbal quality. At this point the profile is textbook cabernet - cherry and a little bit of dark fruit, bell pepper and herbs, warm spice-cabinet oak, pencil shavings, moderate and very smooth tannins. Again, the theme here is simplicity done right, old-school French style cabernet, elegance over power. Remarkably good. A touch too much oak for my taste, but that is personal preference in this case.
I don't see this aging much farther. Drink now.
Medium-plus body. Great acid balance. Mild/moderate very fine tannins. Bright juicy cherry, hints of darker fruits. Bell pepper, herbaceous Cedar, pencil shavings, cooking spices, warm oak.

I think the 2007s are finally coming around. I always thought they came up short over the last several years compared to the 2008s and 2010s, but they have come into their own. Wine still has a lot of time left in it.

Very nice nose but the actual wine left me a bit flat. Much thinner in the middle and on the finish than I was expecting. I would drink this wine in the near term (next 2-4 years) as I don't see how cellaring it longer will improve it at this point in its development.
Walkerjfw's review below captured it well. For you 829 bottles sitting out there I would sample one quickly and decide for yourself. fwiw, we opened and drank our bottle in one sitting.

From coravin, second glass tonight. This bottle in my cellar from release. No decant
Garnet core color, mild separation. Nose of black cherry, cassis, earth, herbs, and...shoe polish. Palate of dark red fruits, floral notes, menthol. Silky smooth but lacking a bit of expression/weight in the mid palate.
Drinks well now, I am a big fan of SLWC and the Fay offering, this one was good...not great. May need a bit more air time to really show. Would be great with steaks or savory foods. Drink over next few years, doubt it will improve much from here.
PS - revisited the balance of this bottle that was not from coravin about a week later. Opened and let sit for about 30 minutes before drinking. Showed much better than previous tasting, maybe the air time did the trick, much more fruit and nuance through the mid/back palate

Very refined Cali cab. We have a strong perfume strawberries on the nose. The palette is treated with dark fruits like blackberry and cherries. The wine finishes with a clean crisp finish, almost like a citrus break.

This wine has been cellared along with other 2007 Stag's Leap District wines since their release. intense dark fruits (blackberry, cherry and raspberry) with a balance of sweetness, tannins and oak. Although ready to enjoy now, if properly cellared, this wine has several great years ahead of it. Paired with a T-bone steak and compounded herbal butter, and watch the bottle empty fast!

Dark raspberry and smoky black cherry nose. Deep plum, slight anise, and a bit of spice on the palate with a moderate length but intense finish. Tannin and acid are well integrated. This could actually brighten up if the tannin softens and integrates a bit more. But I don't think it will happen. Good wine with my birthday dinner.

Decanted for a good hour before tasting. Dark purple core, pink rim. Sweet blue fruit with further hints of espresso, liquorish, menthol and cedar-wood. Very forward in style – monolithic fruit, lots of dry extract and moderate grip. This is pretty much as close to a stereotypical Cali Cab as you can get, and will no doubt divide opinions. High quality raw materials and winemaking, but the end result will not be to everybody’s taste. Should keep for a few more years, but shedding more tannin will quickly render it flabby. Hard to dislike, but in my wiev best without food.

Impenetrable purple-black. Black plums, christmas pudding and lifted violets notes. Mouthcoating, thick palate with layers of fine tannins and masses of dark fruit, chocolate, and black licorice flavours. Colossal wine, still a baby. Much bigger in style than I remember Stags Leap being on my trip to Napa a few tears back. I'd tuck these away for awhile. (92+ Very good wine)

Flat on initial taste but opens up on palate. Full fruit , all glorious harvest tastes and a bright bold finish. I thought it is tasting well now in 2014. May benefit (a bit) with more time in bottle but I wouldn't wait too long. The wine looks garnet colored. The legs are medium. There is no sediment in the bottle. The body is medium/full. The wine has smooth texture. The wine finishes long. The wine has medium acidity.

Worryingly, the nose opens with a big whiff of Vegemite. Behind that are notes of mulberry, blackberry, and anise. The palate shows strong, structured, but gentle tannins. The flavour is primarily earthy, with flavours of star anise, forest floor, and truffle, but there are also fruit notes of blackberry, plum, and pomegranate. Shows structure and complexity; seems built to last.

Had been looking forward to this bottle for a long time, as it's been sitting in my cellar for a long time now. It was nice, but not all I had been hoping for. It does have a knockout nose of small dark and red berries (very ripe-smelling). These flavors carry on to the palate, although I found that it had a second dominant flavor of very toasty oak which had a sort of nut kernel edge to it. It kind of took over when you were not sipping this wine with food, and I'm not sure I loved that aspect of it. Besides that, it's very smooth and full of ripe (but not over-ripe) berry fruit, and still has some years ahead of it I would guess.

Great nose of raspberry, chocolate, and caramel. Deep rich fruit, plums, blackberry, and a lot of black currant into the finish. A very nice napa cabernet, though a tad one dimensional and lacking in complexity (easy for that to happen though when drinking this with an 07' Dominus), but overall hard not like this wine. I am a fan and think this drinks quite nice right now.

That's good stuff! Drinking very well and easily approachable, nice acidity and tannins but well integrated and balanced. What a Cab should be. Had a glass with nice ribeye and second glass by itself after dinner. Enjoyed both very much. Looking back at a note I left over a year ago I then noticed touch of cocoa and soft leathery taste. None of that this time, just nice fruit with a lasting finish

Amazing wine. The 38% petite verdot makes such a difference coupled with the cabernet. 6 veteran wine drinkers sampled this bottle and all thought it was very good and different in a good way. One concern was the cork was like powder. I could not get the cork out as it desintegrated along the way. I was able to filter it into a decanter. Fortunately, the wine was in good shape I am chalking that up to the one bottle as I have had that laying down and chilled the whole time.

I have long been a fan of FAY, having many vintages in my cellar. With 2007 being an excellent vintage I expected more. I'm not sure when or if the winemaker changed due to the winery transition a while back. Perhaps that had something to do with it. It took 3-4 hours to develop into anything at all, the next day was a little better. I'll wait a few years until I try the next bottle....
Delicious on the palate. Taste of cocoa, anise, plum and spices. Maybe some soft leathery flavor. Nice tannins and not overly acidic or overly alocoholic. Very enjoyable.

By far the best this has ever showed. Pop and pour, brown hue starting to show. I don't think this will improve with time, the wine is at the peak. Aged fruit, dusty tones, leather, and a touch of tobacco. Extremely smooth and nice finish.

West Coast Tasting (Binny's South Loop - Chicago, IL): One of the highlights of the tasting. I haven't been impressed with recent releases of SLWC Artemis bottlings and the Fay I've tasted in past didn't blow me away either. This was solid though. Well balanced showing some heady California fruit. A real nice finish. Lovely.

By far the best this has ever showed. Pop and pour, brown hue starting to show. I don't think this will improve with time, the wine is at the peak. Aged fruit, dusty tones, leather, and a touch of tobacco. Extremely smooth and nice finish.

This is really good. Dark and lively flavors of dark berries, just the right amount of toasted oak, and some vanilla. Great balance of acidity to fruit. Really well made.

Good ripe juice, exclusive oak and a firm amount of sweetness. Also pleasant spiciness and soft tannin. Good complexity. Already a great pleasure and a future of several years.

Dark fruit, a lot of spice, a floral component, smokey oak on the finish. Nice length on the finish. Has some silky smoothness. It's a A- wine.

West Coast Tasting (Binny's South Loop - Chicago, IL): One of the highlights of the tasting. I haven't been impressed with recent releases of SLWC Artemis bottlings and the Fay I've tasted in past didn't blow me away either.
This was solid though. Well balanced showing some heady California fruit. A real nice finish. Lovely.
