The palate is tart and tart with dusty, salty, brightness and tones of raspberries white cherry and McIntosh apple. Salty, floral, honeyed and mint elements add complexity. Fresh and floral but shows a lot of depth as well. 53% Pinot Noir, 32% Chardonnay, 15% Pinot Meunier.

Aromas of lime, wet stone, mineral and sourdough bread. Flavors of lime, mineral, shortbread and slate. Ends with a mineral driven finish of 10-15 seconds. Solid champagne.

I have had this bottle in the wine fridge for 2-3 years, and it has built up more weight and interest. The nose shows lots of lemon sherbet, a touch of yeasty, bready characters and a touch of honey. The palate is dry, long and cool, showing similar flavours - lemon, pear drop, honey and brioche. One taster commented that there was a hint of herbs but not to my palate. I have had mixed feelings about this wine over the years, but I have never had a nicer bottle and it is a definite buy.

PNP. Brioche, quince, and honey on the nose. Dry, slightly tart palate, with a good quantity of medium bubbles.
Easy drinker. Served at United Polaris club in Houston (IAH).
