Taste at FHE. Showing well - still young even. Touch age in the color but there's still ripe and slightly stewed red fruit on the nose. Herbs, potpourri, dried vegetables. Aged green pepper. A little menthol. Clean finish.
Note: This wine still has legs! We pulled it from the cellar and opened it to let it breath. We should have decanted it not to control sediment but to let the wine air out a bit. Overall, it was quintessential Cali cab still with tannic structure and a refined and austere nose but a medium and silky flavor. Wish we had another bottle.
Decanted for an hour, still opened up more in the glass. Went great with grilled lamb chops, as expected. Even had a youthful edge on first sip, but the more it sat, the more it evolved. Silky tannins throughout. Don't know if it will get better, but it still has plenty of life left.
