Our final wine of the night. 152 months in the cellar, according to the back label, along with 65 gms of dosage. 100% Chard. Spice cake, high dosage and lime candy. If I look at this wine in contrast to the Pierre Gerbais L'Unique (roughly same dosage but made with old vine Pinot Blanc), that wine is balanced and the dosage doesn't overpower the wine as it does here in the Doyard. Over the past 2 tastings, Astrid was generous to both source and pour these for us blind, and I have learned about Doux through her generosity. In sum, I would buy the PG L'Unique and share it with others for sure, but this Doyard is just too sweet for me.

Nose is light, fresh, and a bit reminiscent of lemon Pledge. Quite sweet on the palate --- as in, Sweet Wine territory “sweet”. Although this was “not my thing,” it was really cool to be able to try it.

Served blind. Richly colored. Rich, mature nose showing cream and vanilla. That had me leaning one way which made a the palate a huge shock. Extremely sweet. Clean finish with some honey. Evidently it spent 152 months in barrel which gave it the mature qualities. That also makes the freshness of the palate a surprise. Disgorged in 2021. Not something I would ever reach for but glad for the experience. A pretty good wine for its lane.

Casual champagnes: First time trying Doyard and liked both that were brought by a generous friend. Such a unique champagne, quite round and lush but not too sweet given the anachronistic dosage that was more commonly seen centuries ago. Nose of Christmas mince pie, great with dessert. Probably my favourite for its unique style.

Utterly fantastic. What an unusual wine and very drinkable with dessert. The older vintages noticeable on the nose with crisper elements from the more recent base. Still many years ageing and of just below average pressure / fizz. Not cheap but lovely.
