The glass is full of exotic fruits such as mango, pineapple, dragon fruit, coconut, also some pears and sour green apples, with raspberries and cranberries that complete a broad fruit bouquet; with air, we begin to notice some more advanced notes of cocoa butter, spicy notes with clove, black pepper, firewood, smoke, and a high sapid feeling with lots of sea salt. This was a delight to drink. The bouchon liège vinification is very noticeable with a dense, silky texture, and very elegantly small bubbles, almost imperceptible; high concentration of flavors, it has a long-lasting intensity on the palate, it could be aged further thanks to the acidity, although right now it's in an attractive state. 92pt

Pizza Night: Dodging Snow Storms (Craig & Nita's Place): Light gold color. Drank a glass over 30 minutes plus. This was the first time cracking one of these and kind of interesting to drink next to the Bollinger Special Cuvee. This had a somewhat unique flavor profile. There's a strong spiciness with a distinct allspice finish, orange peel, chalk, citrus fruits with a little cinnamon apple spice twist note on both the nose and palate. Toward an oxidative style, but not overly so. Very interesting, an excellent food Champagne. 91+ to 92pts.

Outstanding !! Beautiful nose of fresh peeled apples. Acidity and minerality lovely!! Was incredible with Fresh shaved zucchini salad and pulled pork carnitos at fishing camp!! Just gorgeous

Light 14k gold to clear edge, lots of tiny bubbles. Mild nose of freshly peeled apples, the palate is more intense, vinous with ripe white and yellow fruit, and the finish is long and refreshingly tart, and somewhat redder. This is a satisfying and sturdy Champagne, enjoyed with oven-fried chicken.

This is good, but I greatly preferred the Cuvée Speciale. It comes across a bit rounder with lots of ripe citrus and apple fruit at the core tinged with vanilla cream and doughy notes, but leaves me wishing for a bit more focus and acidity on the back end.
