It started off quite tight with whiffs of meat and cherry. It really blossomed to show some florals, earth and a sweet intoxicating perfume. It had real depth and a sensual silky texture. There’s structure and freshness but everything is perfectly harmonious and in perfect proportion.

The 1999 Rousseau Cazetiers is a lovely bottle of Gevrey, which needs a bit of a decant to blow off some notes of reduction, transforming in the glass to deliver a stunning bouquet of red plums, woodsmoke, roast squab and Gevrey soil tones. Expansive, deep and effortlessly elegant on the palate, the wine has a great core of melted tannins and crunchy acidity and a very long finish. There is a completeness here that places this in the very upper echelons of 1er cru Burgundy. Funny to think that without that decant very little of all this would have been apparent.
