French theme dinner at Highland. Tasted blind. Drank in Gabriel Standart. Appearance is clear, pale intensity, lemon colour. Legs. Nose is mildly reductive flint, with other aromas of chalky white stones minerality, white peach, citrus lemon. Developed. On the palate, dry, high acidity, medium alcohol (12.8%), medium body. Medium+ flavour intensity, with flavours of citrus lemon slight curd, white peach, bit of green apple, lots of chalky stones minerality, and touch of integrated nutty oak. Medium+ finish. Very good quality. Quite classic PYCM, and the minerality leads to St Aubin. Nice drinking already. No need for further ageing.

Lovely. Whiff of reduction on first opening, but soon blossomed in glass. Remarkable white floral quality. Mineral. Sharper acidity on rather simple finish. But overall a nice St Aubin to drink now.

I was hoping the CT drink by dates were off, but this bottle seemed like it was a bit tired. Power of suggestion? Beautiful nose with loads of pineapple, toast, citrus, pencil shavings. On the palate, good density and texture, but acidity comes off a bit soft. Nice finish with a hint of pepper and the acidity seems to liven up in the end.
Day 2: In the refrigerator overnight. This has largely fallen apart today. Nose is meh, and flat on the palate.
