Very unique wine in both appearance and taste. Salmon colored but with a brassy tint. The primary fruit flavor is a distinct orange rind note. No signs of yeast or brioche. That rind flavor is tart and there's no sweet fruitiness. I enjoyed it for it's uniqueness. Definitely a food wine but more like a red.

Lovely bright salmon with modest and the tiniest of bubbles. The nose is underripe red fruit and wet rocks, the palate is to riper and slightly alkaline, very vinous. The finish is brisk and lingering. Overall the profile of sparkling reddish wine rather than rose' Champagne, best not too cold.

From memory, still entirely lively and delicious, with roast trout at Copious.

Beautiful Champagne with a touch of savoriness, best not too chilled.
