  • Light on the finish but powerful on the palate. A light nose of tropical fruits, spices and a spray of citrus leads to a dense palate of lemon/lime rind with a light dose of lychee and passionfruit juice. A smooth mineral finish makes this easy to sip glass after glass.

    As the temperature rises closer to room temperature, the more savory saline characteristics pop out, and the oak influence becomes more apparent. Would serve at ~60F personally for the best balance.

    Paired with a variety of small dishes: myoga tofu, squid natto, yellowtail + salmon sashimi. Light to drink yet holds its own even with the fattier yellowtail/salmon belly pieces.

    Will likely age well for at least a decade or so.
