Consumed over two hours. Some added depth after 30 minutes. Starting to show hints of those rich pastry elements I’ve seen with Prevost that has age. Enjoyable, but still a bit lean and too young. Admittedly, the wrong glass was used, a Zalto Bordeaux, which resulted in bubbles dissipating at a rate faster than the wine could evolve in glass.

Utterly amazing, one of the best Champagnes of the year so far. Gorgeous crystalline salty kumquat marmalade. Delicate mineral. Gentle fruit sweetness but finishes dry. Rachel loved it, one of her favorites so far.

Really delicious juice. It took 15-20 mins after opening to really express itself, but once it did you could taste the depth of the wine. Layers of fruit and brioche with lacy acidity made for a long and rich finish. Really firm mouthfeel with good weight. An easy drink now, but could live for years to come. Happy about opening it now, with no regret at all. Everything was on full display.
