So I'm still pretty new to wine tasting, but I've done enough to feel fairly confident about how I taste things. This Cab Sav will probably serve as my reference profile for all Cab Savs henceforth.
This wine is fascinating, and I highly recommend maybe decanting it, because when I had it 10 min. after having it uncorked, all I really tasted was the nice jammy, deep red flavors, and a very prevalent oak influence on the finish. The aroma was very weak too.
5-7 min. afterwards, that's when the pyrazine, or that jalapeno/fresh pepper started to develop more, I first detected it on the nose, and then when I sipped again, then the trace of fresh pepper started to compliment the deep berry flavors, then an even split towards the oak profile (I am very susceptible to oak I guess).
It's after 30 min. or so being open that this bottle starts to shine. That's when the three main profiles: deep, jammy berries; fresh, green jalapeno; and the sort of creamy, dill-sort of oak that I immediately taste before the finish: harmonizes perfectly. Each third perfectly balanced, and is an amazing Cabernet Sauvignon for its price point. Then the finish has a really interesting mint profile! I am so pleased and impressed with my first red from Australia, I love it a lot!

14.0% abv. Quite similar to the 2018 Penley Tolmer that I opened the other day, but a little less depth and maybe a bit less ripe. Actually, I'd prefer a touch more ripeness with this bottle, as it had a little more of an herbal streak than I prefer. Otherwise, nice mouthfeel and went very well with a meal of bratwurst, potatoes, and cauliflower. I preferred the Tolmer, but this was pretty good at the price point ($17/btl). If rating, 87 - 88.
