There’s a super flavour array of bitter Seville orange marmalade, dry toffee, cream, nuts and caramel developing spice and richness. Dry but with a lingering, subtle and persistent finish. Takes a little time to open up and Improves with every sip. CHP 89pts

Marco de Jerez from TSA (La Salut, Redfern): Honeyed, apple, biscuit, saline, almond, walnut, figs, yeast extract, cereal. Savoury, juicy, yeast extract, softly textured, walnuts, saline, dried fruits play second fiddle but are very present. Glorious.

Intense, fortified wine. Looks lige old Amontillado in the glass, but a little darker. The alcohol is felt.
Salted almond, toasted hazelnuts, wood varnish, pickled orange peel, baking spices, sweet tobacco, rusty water.
Drink.
