The nose at fist is extremely savoury, with beef stock, oxo cubes, braised mushrooms and oxidised maderia. Not an aperitif champagne. With time mellows, the savoury notes soften, a bit of apple/bruised apple, apple salt caramel, just enough acidity from the chardonnay.This is a big, powerful champagne that needs some aging. Excellent.

Alex's 40th Birthday (Alex and Fiona's in AMK): This was very nice indeed. The nose showed a lovely blush of strawberries and apples, yeast and brioche, then flowers and spice, all with a little earthy, minerally note running behind. A complex, giving nose, with just a little secondary note of caramel and honey starting to emerge. Alluring stuff. The palate was quite lovely too, with a spine of flinty mineral and bright acidity, along with some still quite sprightly mousse, running though otherwise generously yummy flavours of apples and strawberries, some stony mineral and just a little hint of spice, all these laced with a hint of citrus lemon at the finish. A really bright, brisk, delicious Champagne, just starting to really come into its own. I enjoyed this tremendously.
