Very orange color. Quite acidic and dominating initially. It took a while for it to come around. Last glass was the best. So don’t sweat it if you still have them. The 1996 have this searing acidity which is less of a problem if you have enough to balance it. But in this wine it is too dominating. And you need to appreciate Tertiary notes to enjoy this Champagne. I definitely enjoyed it but it isn’t my preferred style. Too much apricot with high acidity.

(Disgorged in October 2006, 83% Chardonnay with 17% Pinot Noir still red wine added, dosage 8 gr/L) Almost amber colour with a deep red hue added to it, the streams of bubbles are still left and slowly rising in the glass to release the delicious nose showing dark chocolate, minerals together with a lovely cherry blossom as it opens up in the glass. Minerals and apples acidity at first on the very pleasant and intense palate, before a very pleasant cherry stone bitterness takes over on the mid to late. Wonderfully transforms showing more maturity on the lengthy finish showing some dark chocolate, strawberry jam and a pleasant lime zesty note as well. This has evolved in a graceful and elegant way and this stage should should keep for many years to come.. Excellent! (Best 2011-2036)

What a bottle! In my opinion on the top right now if you like tertiary notes. Dominated by so much dried apricot supplemented with nutty and caramel notes. Delicate mousse. Amber colour. Drink now - don't leave it in the cellar. If you don't like heavy tertiary notes it is too late. I have not experienced such dominating characteristic tertiary dried apricot flavours before - it is a matter of taste but we loved it without doubt! (Gilleleje)
