Yellowing, along with nose, pointing to obvious development. A lot more phenolic than expected, with no sign of expected “minerality”. Not much in the way of vibrancy. To be honest, disappointing. This is the first of three bottles, so not sure if an underwhelming showing (cork influence?) or typical at this point. Either way, if Chablis producers don’t adopt screwcaps they’ve got rocks in their heads.

Proper Chablis bottled under DIAM . Green and gold bright fruit on the nose . Mouthwatering acidity and stone fruit . Long crisp finish

Apple and herb (fennel?). Fresh. Much better with a bit of air.

On the nose we suspected some oak, but should not be in this one....

Enticing citrus and fennel nose, creamy middle held together with salty minerality and long length. This punches waaaay above its weight for the price
