I personally love champagnes at this stage of their lives. Darker / straw shade of yellow. Bubbles still present a small/fine but not a lot of them left at this stage. Just enough for a nice effervescent feeling on the pallet. Cooked apples and a little yeast on the nose. Apples, honey, light spices and lemon taste. Great bottle.

Yeasty, apples and honey for days on the nose. Same notes on the palate with the addition hazelnut and lemon spritz. Nice medium plus finish. Drinking well now but can be enjoyed over the next five years.
