Chablis (Bottega Coco): Hazelnut then ashy notes, toasty, a little biscuit, lemon smells sharp. That ashiness doesn't really translate to the palate there is a little bitterness. Non intrusive alcohol warmth, muted fruit, plenty of textured grip. Hmm to meh.

A private lunch (Bistro de la Mer, Amsterdam, NL): Quintessential Chablis character on the nose, with the extra richness and approachability from the vineyard, supple and silky palate, even a bit honeyed, firm 2020 acidity provides drive and energy, convincing finish.
