  • Followed over four hours; no decant. Fairly simple for the first two, before it gained weight and the nose opened up nicely - something like savory lemon and seashells. Saving my other bottles for 3-5 years.

  • Belle robe couleur jaune dorée, au nez la pomme verte domine. Une trame acide et une belle matière avec des arômes de citron, de pommes vertes et une petite salinité. C'est bien entendu encore un peu jeune mais déjà bien appréciable!

  • River rocks, oyster shells, brine, lemon juice, ripe yellow apples, ripe pears, chamoy, cinnamon, nutmeg, crab butter, cheese rind, black licorice, tarragon on the nose. Wow, that is a diverse mix of aromas! Intensity of aromas is medium +. The palate is less complex, but more intense. It's driven by flavors of lemon juice and oyster shells, with some of the other fruits in the background. When you pair it with raw oysters, it REALLY evens out and becomes less briney. Similar to how a sweet wine becomes drier when paired with dessert.

    Medium body with medium + acid. Delicious right now; but I agree with the other reviews that say this should be held for another year. I think the palate will pick up more herbal and spicy flavors in that time.

  • On the more elegant and restrained side than the '20 I recently had. Lemon zest, just underripe orchard fruits, and salt brine on the nose. A bit of floral lift. More of the same on the palate, with lemon oil texture and a briny oyster shell finish. A classic Chablis.

    Good now, but will definitely improve with 1-2 more years in bottle, and probably best in 5-7 for my palate.
