Excellent nose of game, spice and some woodiness (in a good way). Middle is meaty, with dark cherry, smoke and licorice. Dry on the finish with a touch of green stems. After 45 minutes, the nose is evolving to some raspberry notes that carries through to the middle and the green on the finish has gone away.

Burgundy Wine Dinner: Medium red. Fruity and some floral tones with a slightly medicinal black cherry on the nose. Bright in the mouth, with good acidity But the combination of the wine's acids and tannins left me dry in the mouth on the finish and didn't put me over the top.
