Eugene's birthday: Darker in colour and rather advanced compared to the Roederer alongside. Quite sherry-ed on both nose and palate. Probably not the best stored bottle as these can age well.

Dinner at Paradise Teochew. Fine bubbles. Mellow with maturity. Soft and round. Toned down acidity but still lively with some zest. Quite complex, chalky, yeasty notes. Mouth filling.

Eu Ming's Birthday (Bee Heong Palace, Singapore): Quite lovely. Disgorged was back in 3/2006, so this had quite a bit lof age on it. The nose was a complex panoply of aromas - yeast, mineral, ripe apples, with just an edge of white meaty oxidation at the side. This led into a full palate, where strong red apple flavours were spiked with bits of warm spice and mineral. A full, satisfying mouthful, still with a lemony acid freshness and a creamy mousse. Pretty good, and nicely aged at this point of its evolution.

When opened it was very tight and chalky. After 15 min the wine started to relax. Quite complex although in a strict style. Drink now - 2027.
