Very enjoyable Chablis. Nose is full of lemon, crushed oyster, hints of hazelnut, just a hint of baking spice, and sea breeze. The palate is fresh, has good concentration, and is lovely with food. Don't see it deteriorating anytime soon, but probably not getting any better with more cellaring. Very good.

The nose is not explosive but displays a nice Chablis quality of sea water, iodine, and a hint of lemon of white flowers; on the palate there is a decent density and strong acidity rules the day right now; again the saline quality is prominent, lending some viscosity to the wine; still young and undeveloped, citrus acidity dominates over the sea shell undertones; not a lot else going on here at the moment, but a quality showing.

Wildman's Sancerre and Jolivet (Matunuck Oyster Bat): I thought this really rocked, bringing much excitement then the regular Vaillon. The nose is a little muted, but the palate brings and a great intensity, with a lot of depth. This is a delicious Chablis. 92+

Very fresh and lively. No apparent oxidation. Gorgeous nose and complex palate of white stonefruit and lemon.

A bit better than the regular Vaillons, but still the acidity controls the palate a bit too much here. 86-87
