From an excellent looking bottle with a 2 cm fill, this wine had a deep yellow center and clear rims. The medium+ intensity nose showed pretty well from the first pour. After 4 hours it offered up citrus, baked apples, white stone, and some almond paste.
In the mouth, this wine was quite rich and yet it was still dominated by its firm acidity. It exhibited attractive flavors. However, while the acidity was quite long in the mouth, the fruit elements disappeared before the acidity. This was somewhat less than ideal.
This is a very nice wine but I doubt it will get any better from here. Drink up

Chablis Tasting, Rubicon Restaurant (Rubicon restaurant, San Francisco): This wine showed a powerful, skunky nose that faded only partially with extended time in the glass. On the palate, the wine shows acidity that is almost as powerful and searing as the Dauvissat Preuses, with good underlying ripeness of its fruit that seemed to be characteristic of the vintage. It was difficult to enjoy this wine unreservedly, however, given those skunky notes that would not go away.

Chablis Dinner in San Francisco (Rubicon Restaurant, San Francisco): Nose is slightly off, is it old or skunky? It blows off partway to reveal a very nice wine of fine chablis character, with lime, rock, and steel in abundance and a clean finish. (1 vote for 1st; 3 votes for 3d)
