Bottle 2 of 4. It has improved over three years. Notes of tobacco, sour cherry, and beginning to show its age visually. After three hour decant, paired beautifully with slow cooked short ribs over polenta. This wine is in a very good place right now.

Big and bold at 16% ABV. Still very young, but excellent after 3 hour decant. Will hold other 3 bottles for a while. Paired perfectly with steak frites.

Medium body, garnet color. Dark cherry, black slate, tobacco notes. Atypical California cab, but in a good way - reminiscent of a Super Tuscan or even a Brunello. Enjoyed with steak. Drinking very well right now without decant (opened bottle 90 minutes before pouring).

3+ hour decant. Still quite young but nicely structured with smooth tannins. Lots of cherry, black plum on palate. Will hold my other 3 bottles - or better yet find some more - as this one will continue to improve over the next 5-10 years.

Bottle 2 of 3. Still drinking well, but likely at it’s peak. Syrah and Carignan evident in intense color and strong tannins. Drinks closer to “new world” than Rhone in my view, but maybe typical of Languedoc wine as my experience with them is limited.

Bottle 3 of 4 and this was the best. Perfectly fine to drink now, or hold 5+ more years. Paired nicely with bbq ribs after a quick decant, and continued to improve with air.

Nice blend. 33% Cab Franc; 25% Cab Sauvignon; 25% Malbec; 17% Petit Verdot. Bottle 3 of 3. Has held up well. Drink now.

Bottle 3 of 8. Not so impressive when last tried in Feb 2019 but thought it might have potential. This one was much better and seems to be entering its window. Did a quick decant and continued to improve over 2-3 hours. Paired very nicely with weeknight beef stroganoff. Excellent QPR.

Enjoyed outdoors with grilled lamb chops. Typical high acidity, tannins. Still pretty tight after one hour decant. Eventually opened up nicely. Might benefit from 2-5 more years in cellar.

Decanted. Had over two nights. Big cherry, dark fruits. Paired well with Memorial Day grilled burgers. Holding up nicely and actually drinking better now than 5 years ago.

Bottle 4 of 4. 1 1/2 hour decant - needed mainly for sediment. Still drinking magnificently. Probably another 2-3 years at peak but unfortunately this was my last 2009.

Bottle 5 of 7. This is an outstanding wine that keeps getting better. Dark fruits with hints of tobacco and leather on the nose. Taste is consistent. Paired wonderfully with Italian sausage and marinara. No longer needs decant but may be advisable for sediment. Very limited production though - could have used more bottles.

Agree with note below. Acidity was a bit high initially, but nicely integrated on day two. Might benefit from a brief decant or a little more time in the cellar.

Aerated, not decanted. Some off notes; not as good as prior vintages. As it actually was better on days 2-3, probably could benefit from some aging or a 1-2 hour decant.

Balanced, structured and vibrant. Will hold my other 3 for at least a year to see how they evolve, but this wine is drinking extremely well now after a one hour decant.

Purchased two futures after barrel tasting at winery. Balanced with nice fruit. Paired perfectly with grilled salmon. Will hold other bottle 3-5 years as it likely will continue to improve.

Pop/pour at end of night after other fine wines. Enjoyed by all. Opened up nicely as it warmed a bit. Silky, smooth, full bodied - a very good all around Napa cab. Drink now or hold another year.

First of four bottles. Decanted about 90 minutes. Agree with note below. Drinking very young but shows great potential. Heavy oak should mellow over time. Better on day two. The ‘09 is drinking perfectly now and expect this will do the same. Will wait 3-4 years before opening another.

On Valentine’s Day with stuffed pork chop, steamed artichoke. Floral nose. Lime/citrus on palate w/mineral notes. Simple but very nice.

Not what I typically look for in a Pinot. Bigger, darker, and fruitier than most. That said, it's a well made, polished, food friendly wine and a decent value. The sweetness worked remarkably well with the spiciness of stuffed poblano peppers.

Bottle 2 of 4. Lush cherry, raspberry, black slate and more than a hint of cocoa. Perfect pairing with grilled chicken kebabs. Continued to evolve over 2 hours after one hour decant. Another fine effort by Unti.

Some time in the cellar paid dividends with this one. No decant. Soft fruit, a little earthy. Paired very nicely with Asiago cheese. Drink now.

Purchased at winery. Great food wine. On the dry side, with medium body, nice acidity. Enjoyed before dinner with cheese, antipasto. Good QPR. Would buy again.

Cloyingly sweet with alcohol on the nose and cough syrup on the palate - but used 1/2 bottle in crock pot for pot roast with mushroom gravy and it worked quite nicely. Added 5 points to rating for that.
