I’m enjoying the elegance and depth to this Sauvignon Blanc. That burst of pineapple on the palate was amazing.

Disgorged 04/2019. Pale straw in color with delicate aromas of flint, mineral, sweet cherry, pear, honey, and some slight sweet biscuit. Fine mousse with nice tannin structure and high acid. Fresh and bright with red grapefruit, tart cherry, smoke, and slight green apple on the palate. Great expression of a grower champagne. Unique and showcases the terroir well.

Disgorged 04/2020. Pale in color pretty intense red fruit aromas, green apple, lemon, slight stone, pear, and lees. Very bright and fresh with fine mousse. Doesn’t drink like a 100% Pinot, drinks like it had some Chardonnay. Green apple, red apple, red berries, lemon, lime, and slight cream. Very nice!

Deep ruby in color with aromas of cherry, raspberry, plum, and baking spices, the high alcohol comes through on the nose. Medium to high acid with silky tannins. Sweet and juicy cherry, sweet blackberry, and raspberry on the palate. Lots of fresh juicy fruit. Once decanted aromas develop more towards sweet and juicy plum and blackberry, and slight spice. The palate evolves to sweet blackberry and raspberry and cherry.

Light ruby in color with aromas of blood orange (almost going to cherry cola), cinnamon, and tart cherry. High acid with low to medium tannins. Light but energized, cherry and red fruit on the palate. Need to decant to mellow out the acid, with decanting it mellows everything down and integrates the tannins and acid better. Nose: blood orange, cherry, and red fruit. Palate: tart cherry, cranberry, and raspberry.

Deep garnet in color.
Initial uncorking... notes of blackberry, cedar, sandalwood, plum, and spices.
2 hours decanted...deep concentrated aromas of blackberry, plum, blueberry, and pencil shavings.
Silky tannins with red fruits, blackberry, blueberry, black tea. Everything is well integrated.
Paired with lamb loin, great pairing. This is drinkable now but I’m interested to know where this will go with age. Will repour and revisit next day.

More concentrated nose of blackberry, plum, blueberry, black currant, and slight pencil shavings. High tannins with low acid. Serve it cellar temp to bring out freshness. Blackberry, cherry, and blueberry on the palate. I like the amount of tannins present but I could use more acid. Possibly too soon to open, recommend waiting.
